Insomnia Cookies is currently seeking a full-time Assistant Bakery Operations Manager (ABOM) at its Lexington, Kentucky store located at 433 Jersey St, Lexington, KY 40508. This pivotal role is a leadership pipeline position designed to develop the next generation of Bakery Operations Managers. The Assistant Bakery Operations Manager operates at near-Bakery Operations Manager (BOM) level, blending hands-on operational excellence with talent development, administrative ownership, and team leadership. ABOMs act as true extensions of the Bakery Operations Manager, capable of stepping into full bakery ownership when required.
The ABOM is responsible for executing core bakery operations with urgency, accuracy, and accountability, ensuring high standards in product quality, cleanliness, food safety, and guest experience. This role supports all facets of bakery operations including inventory rotation, scheduling, staffing coordination, ordering, and inventory accuracy. Additionally, the ABOM plays a key role in recruiting, onboarding, training, and coaching new staff, fostering a culture of accountability and continuous growth. Leadership and ownership are major aspects, with ABOMs managing bakery operations independently in the absence of the Bakery Operations Manager and partnering with area leaders to identify and solve operational challenges.

Job Duties
- Execute all core bakery operations including inventory rotation, scheduling support, staffing coordination, and administrative checklists
- maintain strict adherence to product quality, cleanliness, food safety, and guest experience standards
- support ordering, inventory accuracy, and shrink control
- assist in schedule creation and labor execution to meet operational targets
- support recruiting, interviewing, onboarding, and training of new staff
- deliver consistent coaching and real-time performance feedback
- hold team members accountable to standards while reinforcing a growth mindset culture
- ensure onboarding and training programs are executed to company standards
- manage bakery operations independently in the absence of the BOM
- model urgency, accountability, and operational discipline
- partner with BOM and Area leadership to identify operational gaps and implement solutions
- maintain continuity of operations during leadership transitions or staffing shortages
