The role available at Melvin's BBQ is a dynamic and multifaceted position that requires the individual to work between the two locations, assisting in both the prep cook and assistant pit-master duties. This unique position offers a weekly schedule that involves floating between the prep kitchen and the pit area, demanding flexibility and adaptability from the employee. As a Prep Cook, the individual will be responsible for following detailed prep lists designed by the Executive or Sous Chef, measuring ingredients, preparing vegetables and meats, and maintaining a clean and organized station. Understanding and adhering to specific portion control and presentation guidelines are essential, as is practicing exemplary safety and sanitation standards throughout prep and service times.

Alternatively, as an Assistant Pit-Master, the role involves hands-on management of the barbecue pit, including trimming and seasoning meats, managing smoker fires, cleaning, and ensuring the overall quality of smoked meats. The Assistant Pit-Master also prepares sides and sauces, contributes to general restaurant cleaning, and upholds the brand's standards through exceptional barbecue execution. Although prior experience with barbecue is preferred, it is not mandatory, making this role suitable for individuals passionate about learning and developing their skills in barbecue cooking.

The employee is expected to adhere to a structured weekly schedule that includes early morning shifts as well as a dedicated day off, ensuring a balance between work and rest. The schedule reflects the varied nature of the job, with designated prep cook shifts primarily at the Mt. Pleasant location and assistant pit-master shifts alternating between Mt. Pleasant and James Island. Sunday is observed as a day off for both locations, giving staff the opportunity to recharge.
