The Pastry Assistant Chef position at The Houstonian Hotel, Club & Spa is an integral role in maintaining the bakery and pastry department's standards. This role involves assisting the Pastry Chef in all daily operations, ensuring that all baked goods, desserts, and confections meet the establishment's exceptional quality and presentation standards. The ideal candidate will have a passion for pastry arts, extensive knowledge of various pastry styles including French, Viennese, and American, and a creative eye for cake decorating and showpieces. This full-time role demands leadership capabilities as the assistant is expected to supervise pastry shop employees, manage production schedules, coordinate with other departments, and uphold hygiene and safety protocols in the kitchen. The position requires the ability to work flexible hours including weekdays, weekends, and holidays to meet business demands.

Key responsibilities include motivating and counseling pastry staff, managing inventory through daily requisition forms, maintaining health code standards within the pastry shop, and actively participating in menu development and special event preparations. This role requires excellent communication skills, organizational ability, and the stamina to work in a fast-paced kitchen environment where physical demands and stringent standards are the norm. Candidates must hold a valid Food Handlers Certification and demonstrate proficiency in computer applications such as Windows and Excel to handle reporting and inventory tracking. Job Requirements

  • Food Handlers Certification
  • Five years experience in food/pastry
  • Knowledge of French, Viennese, and American pastries
  • Ability to lift and carry objects up to 30 lbs
  • Strong physical stamina for prolonged standing, walking, climbing, kneeling, and reaching
  • Effective communication skills including use of two-way radios
  • Ability to work in fast-paced kitchens with loud noise levels and temperature extremes
  • Proficiency with computers including Windows and Excel
  • Ability to follow health and safety protocols including safe chemical handling
  • Flexible availability including weekends and holidays

Job Qualifications

  • Five years experience in food/pastry
  • High level of creativity combined with ability to handle production
  • Knowledge of French pastries, Viennese, and American pastries
  • Proficient in cake decorating and show pieces
  • Knowledge of kitchen sanitation procedures
  • Ability to make decisions and resolve issues
  • Excellent communication skills both written and verbal
  • Organized, flexible, and able to work well under pressure
  • Responsible, reliable, punctual, self-motivated, and energetic
  • Ability to follow instructions from Pastry Chef
  • Proven team leader promoting good work ethics and a fun environment
  • Availability to work varied shifts including weekdays, weekends, and holidays

Job Duties

  • Provide support to the Pastry Chef
  • Motivate, supervise, and counsel pastry shop employees
  • Fill out requisition forms daily making sure proper par stock of all food items are maintained
  • Attend BEO meetings
  • Ensure pastry shop is clean and up to health codes
  • Make recommendations and suggestions regarding hiring, terminating, and counseling staff to the Pastry Chef
  • Assume full responsibility of pastry department when Pastry Chef is not on premise
  • Ensure proper and consistent production of all food products at all times
  • Provide quality products that are timely, fresh, and meet quantity needs
  • Accommodate any special requests by other departments
  • Coordinate production of all baked goods and dessert items ordered by outlets
  • Be actively involved in developing new dessert items
  • Perform other duties as assigned
