The role of Assistant Pastry Chef at The Houstonian Hotel, Club & Spa is a pivotal position within the culinary team. This role is responsible for assisting the Pastry Chef in all operations, including supervising the production of baked goods, desserts, and confections to meet strict quality standards. The Assistant Pastry Chef plays a crucial part in maintaining the luxury standards that guests expect, ensuring all finished products adhere to specified recipes, presentation, and freshness criteria. This position requires a commitment to excellence in food preparation, leadership skills to motivate and manage pastry shop employees, and rigorous quality assurance practices.
In addition to supporting the Pastry Chef, the Assistant Pastry Chef oversees daily requisition forms to maintain proper par stock of food items and ensures the pastry kitchen operates within health and safety regulations. Participation in Banquet Event Order (BEO) meetings and coordination with other departments to accommodate special requests are also essential functions of this role. The Assistant Pastry Chef must be creative, able to contribute to the development of new dessert items while upholding the operational demands of the pastry department. Leadership capabilities are vital as the Assistant Pastry Chef assumes full responsibility for the pastry department in the Pastry Chef's absence, driving the team towards continuous improvement and excellence.

Job Requirements
- Must have a Food Handlers Certification
- Ability to stand, walk, climb ladders and stairs, kneel, reach overhead, lift and carry objects up to 30 lbs
- Ability to work in fast-paced kitchen environments with varying noise levels and temperatures
- Must communicate effectively one-on-one and via two-way radio
- Ability to read instructions, reports, and log sheets
- Ability to work with computers and PDAs under various lighting
- Ability to analyze and process written information
- Must work safely with chemicals per SDS sheets and regulations
Job Qualifications
- Five years experience in food/pastry
- High level of creativity
- Knowledge of French, Viennese, and American pastries
- Expertise in cake decorating and show pieces
- Knowledge of kitchen sanitation procedures
- Knowledge of safe use of commercial kitchen equipment
- Computer proficiency with Windows and Excel
- Strong decision-making and problem-solving skills
- Excellent written and verbal communication
- Ability to work well under pressure
- Organized, flexible, responsible, and reliable
- Self-motivated and energetic
- Ability to follow instructions from Pastry Chef
- Team leadership skills
- Promotes good work ethics and a positive work environment

Job Duties
- Provide support to the Pastry Chef
- Motivate, supervise, and counsel pastry shop employees
- Fill out requisition forms daily maintaining proper par stock
- Attend Banquet Event Order (BEO) meetings
- Ensure pastry shop cleanliness and compliance with health codes
- Make recommendations regarding hiring, terminating, and counseling staff
- Assume full responsibility of pastry department when Pastry Chef is absent
- Ensure proper and consistent production of all food products
- Provide quality products that are timely, fresh, and meet quantity needs
- Accommodate special requests from other departments
- Coordinate production of all baked goods and dessert items ordered by outlets
- Participate actively in developing new dessert items
- Perform other assigned duties
