As a critical part of its culinary team, the Pastry Sous Chef position at The Houstonian Hotel, Club & Spa supports the Pastry Chef in maintaining the high standards expected of this prestigious establishment. The role involves overseeing the production of baked goods, desserts, and confections to ensure quality, consistency, and adherence to all specifications. The Pastry Sous Chef also plays an essential supervisory role by motivating and managing pastry team members, ensuring a clean and safe working environment, and assisting with staffing decisions including hiring and counseling. This position demands a high level of creativity, culinary expertise in various pastry styles such as French, Viennese, and American, and strong leadership skills to uphold the hotel's luxury standards.
In this role, you will participate actively in operational meetings such as Banquet Event Order (BEO) meetings, coordinate the timely production of a wide range of dessert items, and contribute to the ongoing development of new pastry products. The position requires flexibility to work varied shifts including weekdays, weekends, and holidays, all while maintaining professionalism and discretion. Because of the extensive use of commercial kitchen equipment and the need to manage a busy pastry shop, knowledge of kitchen sanitation procedures and safety protocols is essential. The Pastry Sous Chef must embody reliability, punctuality, and a proactive attitude, ensuring the pastry department consistently produces fresh, high-quality products that meet the quantity needs of all outlets within the hotel.

Job Requirements
- must have food handlers certification
- must have five years experience in food or pastry
- must be able to work varied shifts including weekdays, weekends, and holidays
- must be organized and flexible
- must be able to stand, walk, climb ladders and stairs, kneel, reach overhead, lift and carry up to 30 lbs
- must be able to work in a fast-paced kitchen environment
- must be able to communicate effectively with guests and co-workers
- must be able to read and follow instructions and log sheets
- must be able to work safely with chemicals according to regulations
Job Qualifications
- five years experience in food or pastry
- high level of creativity combined with ability to handle production
- knowledge of French pastries, Viennese pastries, and American pastries
- expertise in cake decorating and show pieces
- knowledge of kitchen sanitation procedures
- knowledge of the safe use of commercial kitchen equipment
- computer knowledge including windows and excel
- ability to make decisions and resolve issues
- excellent communication skills both written and verbal
- organized and flexible
- able to work well under pressure
- responsible, reliable, punctual, self-motivated and energetic
- ability to follow instructions from the pastry chef
- team leader promoting good work ethics and a fun environment
- availability to work varied shifts including weekdays, weekends, and holidays
- food handlers certification
Job Duties
- provide support to the pastry chef
- motivate, supervise, and counsel pastry shop employees
- fill out requisition forms daily ensuring proper par stock of all food items are maintained
- attend BEO meetings
- ensure the pastry shop is clean and compliant with health codes
- make recommendations regarding hiring, terminating, and counseling of staff to the pastry chef
- assume full responsibility of the pastry department in the absence of the pastry chef
- ensure proper and consistent production of all food products at all times
- provide quality products that are timely, fresh, and meet quantity needs
- accommodate special requests by other departments
- coordinate production of all baked goods and dessert items ordered by outlets
- actively develop new dessert items
- perform other duties as assigned
