The Pastry Assistant role is an integral part of the club's culinary team, reporting directly to the Executive Pastry Chef. This position involves assisting with the oversight and smooth operation of all pastry-related activities within the club's food service outlets and banquet events. The Pastry Assistant will play a key role in menu development, ensuring that all pastry products meet the club's strict standards for quality, freshness, and presentation. Additionally, the role requires maintaining inventory controls and assisting with the setup and breakdown of pastry workstations and equipment.
Ideal candidates for this full-time, non-exempt role will possess a strong foundation in pastry arts, demonstrated through 2-3 years of relevant experience, preferably in fine dining, private club, or hotel settings. Candidates should also have culinary education credentials or certifications, such as a degree in Culinary Arts and ServSafe Sanitation certification, and show familiarity with specialized pastry techniques ranging from Classical French pastries to modern cake designs.
This role demands flexibility in schedule, including availability for days, nights, weekends, and holidays, as well as the ability to work in a physically demanding environment. The Pastry Assistant is expected to maintain excellent communication skills in English, with bilingual abilities considered a plus. Job Requirements
- High school diploma or GED
- 2-3 years of pastry assistant or above experience
- ServSafe Sanitation certification
- Ability to work flexible schedules including nights, weekends, and holidays
- Ability to stand for prolonged periods
- Ability to lift and carry items up to 25 lbs, up to 50 lbs with assistance
- Ability to operate kitchen and restaurant equipment
- Ability to work indoors and outdoors in various weather conditions
- Food Handlers License
- Ability to maintain a clean and safe work environment per state regulations
- Proficient oral and written English communication skills
- Ability to work within a sales volume of $5-$6 million
- Familiarity with food allergies and food-borne illnesses
- Knowledge of food and beverage service standards and member relations
- Ability to price menus and assist with budgeting
- Willingness to adhere to club policies and procedures
- Ability to work in a busy, noisy environment
- Ability to bend, stoop, climb, and pull frequently
- Must comply with California State laws and club Human Resource Department policies
- Ability to actively listen, learn, and demonstrate critical thinking
- Ability to work a minimum of 40 hours per week
Job Qualifications
- High school diploma or GED
- Degree in Culinary Arts highly desired
- ServSafe Sanitation certification required
- Culinary certificates in various pastry subjects such as Pulling Sugar, Classical French, Breads, Modern Pastries, and/or Cakes is a plus
- 2-3 years' Pastry Assistant or above experience highly desired
- Private club, fine dining, or hotel background preferred
- Ability to operate within a sales volume of $5-$6 million in revenue
- Skilled in various pastry subjects including Pulling Sugar, Classical French, Breads, Modern Pastries, and Cakes
- Excellent verbal and written communication skills
- Comprehensive knowledge of food allergies and food-borne illnesses
- Ability to work all shifts including days, nights, weekends, and holidays
- Food Handlers License
- Degree in Culinary Arts preferred
- Fine dining background preferred
- Must understand pricing of menus and assist with budgeting
- Knowledge of California State laws and regulations and compliance with Human Resources policies
- Demonstrates a consistent drive to improve member and guest service

Job Duties
- Maintain and exhibit a solid knowledge and understanding of all food products and skillfully apply culinary and cooking techniques
- Assist the Executive Pastry Chef and Pastry Sous Chef with new ideas for menu creation and food preparation
- Assist the Executive Pastry Chef and Pastry Sous Chef in the proper preparation of all menu items, operation of equipment, and setting up/breaking down workstations, tools, equipment, and supplies
- Ensure that a clean and safe environment is always maintained in both kitchen and storage facilities in accordance with California Health Department standards
- Demonstrate a consistent drive to improve member and guest services
- Ensure that product quality, freshness, and presentation always meet club standards
- Responsible for the execution of restaurants and banquets in relation to service
- Abide by the policies and procedures as outlined in the Food & Beverage Kitchen Employee Manual
- Perform other duties as assigned
