The Manager in Training (MIT) role at Pollo Nation is a comprehensive leadership development opportunity designed to prepare aspiring managers for future leadership positions within the company. This hands-on training position offers individuals exposure to all facets of restaurant operations including food safety, guest service, labor and financial management, and team leadership. The MIT works closely with the Training General Manager, Field Training Manager, and other leadership personnel to develop the skills necessary to lead a team of 25 or more employees effectively. This role is ideal for candidates passionate about the restaurant industry and eager to advance their careers in management.

In the MIT position, candidates will learn to oversee daily restaurant operations ensuring the highest standards of food quality, safety, cleanliness, service, and presentation. The role demands supporting a high-performing team culture by engaging in continuous coaching, motivating team members, and maintaining accountability throughout the team. MITs are expected to model and mentor hourly team members and managers, resolving guest issues promptly and professionally to enhance customer satisfaction. They will also assist with essential operational tasks such as scheduling, inventory management, payroll, ordering, fund handling, and performing financial reconciliations. Additionally, the MIT participates in hiring, onboarding, and training both hourly staff and future leaders, which underscores the role’s focus on team development and leadership cultivation.

The MIT also plays an active role in monitoring the restaurant's labor and financial performance, striving to meet and exceed key performance indicators including sales targets, labor budgets, transaction goals, and EBITDA achievements. Maintaining a safe and inclusive working environment is a priority, involving incident reporting, compliance with safety protocols, and facility upkeep. This position requires adaptability and the ability to make sound decisions under pressure, ensuring smooth operational flow even during challenging situations. Job Requirements

  • High school diploma or GED required
  • 3 to 5 years of experience in the restaurant industry with at least 2 years in a supervisory or leadership role
  • ServSafe Certification required
  • Basic computer skills
  • Strong verbal and written communication skills in English
  • Proven leadership ability team development experience
  • Ability to work in a fast-paced dynamic environment
  • Flexibility to work various shifts including evenings weekends and holidays
  • Ability to handle physical demands of the job which include sitting talking hearing using hands reaching standing and walking
  • Commitment to maintaining a safe and inclusive work environment

Job Qualifications

  • High school diploma or GED required
  • 3 to 5 years of experience in the restaurant industry with at least 2 years in a supervisory or leadership role
  • ServSafe Certification required
  • Proficiency with technology systems including HRIS platforms Outlook and internal company tools
  • Strong verbal and written communication skills in English
  • Proven leadership ability team development experience and a passion for operational excellence

Job Duties

  • Oversee day-to-day restaurant operations ensuring food quality safety cleanliness and consistent service and presentation
  • Support a high-performing team culture through ongoing coaching engagement and accountability
  • Model and coach hourly team members and managers in delivering exceptional guest service and addressing guest concerns with urgency and care
  • Supervise and assist in leading a team of 25 plus employees ensuring adherence to company and regulatory standards
  • Conduct daily pre-shift meetings to align teams on goals service standards and operational updates
  • Assist in scheduling inventory ordering payroll fund handling and reconciliation processes
  • Participate in hiring onboarding training and developing both hourly team members and future leaders
