The role of Assistant Back of House (BOH) Manager is a critical leadership position within Gator's Dockside's kitchen operations. This position assists the BOH Manager in overseeing all kitchen functions, including food purchasing, receiving, preparation, and ensuring that all quality standards related to food safety, sanitation, and cleanliness are maintained. The Assistant BOH Manager plays a vital role in supporting the smooth operation of the kitchen team, ensuring products are prepared following the restaurant's recipes and portion controls, and managing inventory effectively to keep food costs controlled.
Additionally, the Assistant BOH Manager is responsible for training kitchen staff on proper procedures related to food safety, sanitation, and kitchen equipment maintenance. This leadership role also requires close collaboration with restaurant managers to help plan and price menu items, establish portion sizes, and develop standard recipe cards for new dishes, ensuring consistency across the board. Job Requirements
- High school diploma or equivalent
- Previous experience in a restaurant kitchen environment
- Ability to work flexible hours including weekends and holidays
- Physical ability to stand for extended periods and perform kitchen duties
- Strong attention to detail and commitment to quality standards
- Good interpersonal skills for effective team collaboration
- Willingness to comply with health and safety regulations
Job Qualifications
- Experience in kitchen or food service management
- Knowledge of food safety standards and sanitation procedures
- Ability to train and lead kitchen staff
- Strong organizational and inventory management skills
- Experience with food cost control and recipe standardization
- Excellent communication and teamwork abilities
- Familiarity with preventative maintenance practices for kitchen equipment
Job Duties
- Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards
- Responsible for ordering food products according to predetermined product specifications and received in correct unit count and condition and deliveries are received in accordance with the restaurant's receiving policies and procedures
- Assisting the BOH Manager in controlling food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points
- Fill in where needed to ensure guest service standards and efficient operations
- Work with restaurant managers to plan and price menu items
- Establish portion sizes and prepare standard recipe cards for all new menu items
- Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant's preventative maintenance programs
