The Assistant Head Baker role at Ole & Steen is an excellent opportunity for a passionate baking professional to join an international and enthusiastic team of artisan bakers devoted to crafting authentic Danish breads and pastries. The position involves overseeing the production of traditional Danish breads, ryes, rolls, and laminated dough products daily, ensuring that the high standards of quality and consistency are met. This is a hands-on role where the candidate will manage up to six team members, coordinate daily scheduling, maintain an organized and clean bake shop, and uphold all health and safety regulations.

The ideal candidate for the Assistant Head Baker position should be deeply enthusiastic about baking, especially about long fermentation processes and Danish baking traditions. They must demonstrate a genuine passion for bread, have prior professional baking experience (preferably between two to four years), and have familiarity with Danish or Scandinavian baking methods. The role requires the ability to work overnight shifts, weekends, and some holidays. Physical stamina is essential as the job involves lifting heavy ingredients and standing or bending for extended periods.

Job Requirements

Job Duties

  • Oversee daily production of breads, ryes, rolls, and pastries according to our traditional Danish recipes
  • Observe and maintain the quality of products being baked, and adjust oven temperatures, baking time accordingly
  • Management of a team of up to 6 - handling daily scheduling
  • Management of bakery, including organization and cleanliness of dried storage and fridges
  • Measuring and combining ingredients and using mixers, heat sources, and other equipment
  • Checking-in and accepting deliveries from our purveyors
  • Follow portion standards
  • Monitor inventory of ingredients for production
  • Properly label and store ingredients
  • Check equipment to ensure that it meets health and safety regulations
  • Maintain a clean and orderly bake shop and adhere to health and safety standards
