The position of Assistant General Manager at Five Star Parks & Attractions is designed for experienced restaurant operators who are ready to expand their leadership to a more complex and exciting environment. This role is often described as the "Mayor of the building," commanding a full P&L and overseeing all operations within the park's walls, including front-of-house (FOH), back-of-house (BOH), attractions, games, retail, parties, and corporate events. Unlike a traditional restaurant management role, this position encompasses multiple profit centers and revenue streams, making it a challenging and rewarding opportunity for operators who excel in fast-paced, high-volume settings.

As an Assistant General Manager, you will spend over 70% of your time actively managing the floor, engaging directly with guests and team members to ensure seamless operations, exceptional service, and quick recovery in the event of any issues. The remaining time will be dedicated to critical back-office responsibilities such as budgeting, forecasting, scheduling, inventory management, vendor relations, and regular performance reviews. The role requires a hands-on leader who can balance operational excellence with people development, maintaining strict adherence to brand standards and safety protocols like ServSafe and TIPS certifications.

Job Requirements

  • Minimum five years as a general manager or assistant/senior assistant manager in relevant high-volume casual dining or family entertainment
  • Ability to manage P&L and understand key financial metrics
  • Experience leading diverse teams including salaried managers and large hourly crews
  • Commitment to spending 70% plus of shift on the floor engaging with staff and guests
  • Willingness to work nights, weekends, holidays, and peak seasons
  • Openness to relocation for career advancement including signing mobility agreement
  • Proficiency with POS, scheduling, and inventory systems
  • Ability to maintain high standards of safety and cleanliness
  • Excellent communication and leadership skills

Job Qualifications

  • Five plus years of experience as a general manager or strong assistant/senior assistant manager in casual dining or family entertainment
  • Proven ability to read and manage P&L, build labor plans, and defend forecasts
  • Experience leading front-of-house and back-of-house operations with multiple revenue streams
  • Strong coaching and team development skills
  • Familiarity with brand standards, audits, secret shops, and service excellence
  • Ability to manage multiple profit centers including food, beverage, attractions, and retail
  • Experience with POS systems such as Aloha, Toast, Micros, or NCR
  • Proficiency in scheduling software like HotSchedules, 7shifts, or UKG
  • Knowledge of inventory management and Microsoft 365
  • ServSafe Manager certification and TIPS or state-equivalent alcohol service certification preferred
  • Bachelor's degree in business, hospitality, or restaurant management helpful but not required

Job Duties

  • Own full P&L including revenue, food and beverage costs, labor, attractions revenue, games revenue, prize cost, R&M, and EBITDA
  • Build accurate forecasts and budgets and defend variance
  • Partner with corporate accounting on payroll accuracy, vendor invoices, and period-end close
  • Manage inventory across food, beverage, retail, redemption prizes, and game cards/wristbands
  • Recruit, hire, onboard, and develop salaried management team and hourly crew
  • Run meeting cadence including daily pre-shift, weekly manager meetings, monthly business reviews, and quarterly planning
  • Coach team members with specifics, praise loudly, correct privately, and document all interactions
  • Walk the floor every shift engaging with guests and team members
  • Own service recovery ensuring fast, generous, on-brand responses
  • Achieve secret shop scores, NPS, and Google review targets
  • Conduct daily walk-throughs adhering to Safe, Clean, and Fun standards
  • Oversee food safety, responsible alcohol service, and attraction safety protocols
  • Partner with corporate Games & Amusements and Tech Services teams to maintain attractions
  • Represent the park in the local market engaging with schools, leagues, chambers, and media
  • Collaborate with corporate Marketing and Regional Director of Sales to drive group bookings and events
