The role of the Assistant Garde Manger Chef at Boca West Country Club is a vital position within the culinary team, responsible for the preparation, presentation, and quality control of all cold food items. This includes an array of salads, charcuterie, pâtés, terrines, cold appetizers, and other cold dishes that are essential to the club's dining experience. The Assistant Garde Manger Chef plays a key role in collaborating with the Executive Chef and kitchen staff to design seasonal menus and special event offerings that meet the highest standards of culinary excellence. Ensuring that recipes and presentation guidelines are meticulously followed, the Assistant Garde Manger Chef maintains the garde manger station's cleanliness and organization while adhering strictly to health and safety regulations. This role also involves inventory management and timely service coordination during events.

Beyond technical skills, the Assistant Garde Manger Chef is expected to mentor junior kitchen staff, provide expert training in garde manger techniques, and assist with the artistic design and setup of buffet displays for banquets and special occasions. Job Duties

  • Prepare and present a wide variety of high-quality cold dishes including salads hors d'oeuvres pâtés terrines and other plated items
  • Collaborate with the Executive Chef and kitchen staff to create seasonal menus and special event offerings
  • Ensure that all food is prepared in accordance with established recipes guidelines and presentation standards
  • Maintain cleanliness and organization of the garde manger station including proper storage of food items in accordance with health and safety regulations
  • Monitor inventory levels of cold food items and assist in ordering supplies as needed
  • Work collaboratively with kitchen staff during service to ensure timely and efficient service
  • Maintain a focus on food safety and sanitation procedures in all areas of food preparation and handling
  • Train and mentor junior kitchen staff in garde manger techniques and practices
  • Assist with the design and setup of buffet displays and food stations for events and banquets
  • Enforce proper food handling and sanitation procedures to comply with health department standards
  • Participate in ongoing training and skill development to enhance culinary techniques and knowledge
