In the role of Assistant Food Service Manager based in Brownsville, Texas, you will assume a pivotal corporate management position that supports the Food Service Manager in overseeing day-to-day food service operations at a key contract site. This role involves managing a diverse team, including Cook II Crew Leaders, Cook II, Cook I staff, and a food service Warehouse Operator, ensuring all activities comply with standards set by organizations such as the American Correctional Association (ACA), the Performance-Based National Detention Standards (PBNDS), OSHA regulations, and other applicable legal and regulatory frameworks.

Your responsibilities will include supervising staff to meet scheduled project timelines, enforcing strict adherence to contractual food service standards, managing inventory levels, ensuring the sanitation of the food service facilities, and assisting with the development and execution of training programs for both staff and detainees. This position also requires developing budgets, facilitating problem-solving efforts, administering discipline and performance evaluations, and maintaining safety compliance across all operations.

Job Requirements

  • High school diploma or equivalent
  • Valid Food Safety Manager Certification
  • Valid driver’s license
  • Minimum three years supervisory or managerial experience in large quantity cooking environments
  • Experience purchasing food supplies and equipment
  • Experience training employees and conducting performance evaluations
  • Experience working as Cook II, Cook Supervisor or equivalent in detention facilities
  • Knowledge of PBNDS, ACA, PREA, OSHA and federal regulations
  • Familiarity with union CBA, Akima, PIDC and ICE policies
  • US citizenship or lawful permanent residency
  • Residency in the US for last five years unless on US government duty
  • Ability to obtain favorable Suitability for Employment determination through ICE
  • Possession of Social Security card

Job Qualifications

  • High school diploma or equivalent (GED) and possess a valid Food Safety Manager Certification
  • Possess a valid driver's license
  • Three (3) years of previous experience as a supervisor or manager for large quantity cooking in an institution, military, commercial kitchen, or similar setting
  • Skilled in measuring and mixing ingredients according to recipes and calculating number of servings
  • Three (3) years of previous experience in purchasing food supplies and equipment
  • Three (3) years of previous experience training employees and conducting performance evaluations
  • Two (2) years of previous experience as a Cook II, Cook Supervisor or equivalent in a detention facility, jail, or prison
  • Knowledge and experience with PBNDS, ACA, PREA, OSHA and other federal regulations
  • Knowledge of union CBA, Akima policies and procedures, PIDC and ICE policies and procedures
  • US citizen or person lawfully admitted into the United States for permanent residence
  • Must have resided in the US for the last five (5) years (unless abroad on official US government duty)
  • Must be able to obtain a favorable Suitability for Employment determination through ICE
  • Must have a Social Security card issued by the Social Security Administration

Job Duties

  • Supervises and coordinates activities to ensure project delivery
  • Monitors schedules and timeline of delivery of project
  • Enforces project standards by facilitating problem solving and project resourcing
  • Monitors budgets, interim milestones, and final deliverables
  • Partners with project managers to develop and execute business plan, facilitate collaboration to achieve project objectives
  • Leads and directs the work of other employees
  • Supervisors typically have authority for personnel decisions related to hiring, performance, and disciplinary actions
