The role of Assistant Food Safety & Kitchen Manager at Nourish Markets is a full-time position based in Wilmington, DE, offering a competitive hourly wage ranging from $28 to $30, depending on experience. Reporting directly to the Executive Chef/Kitchen Manager, this position is instrumental in upholding the highest standards of food safety and kitchen operations within a USDA/FDA-regulated commissary kitchen environment. The ideal candidate will take ownership of food safety compliance, including managing HACCP and Preventive Controls Food Safety Plans, and ensuring that all critical control points, preventive measures, and verification activities are thoroughly and accurately executed.
Beyond food safety, this high-impact role is deeply integrated into kitchen production, quality assurance and control, team supervision, and administrative functions. You will be actively involved in hands-on kitchen tasks while maintaining documentation, leading internal audits for USDA, FDA, and third-party inspections, and managing food safety software systems for ingredient traceability and recall readiness. This position demands a detail-oriented and process-driven individual with strong culinary skills and leadership capabilities who thrives in fast-paced, mission-driven environments.
The Assistant Food Safety & Kitchen Manager will supervise the kitchen production team, enforce standard operating procedures, and provide coaching on food safety, sanitation, and production standards. This role also includes supporting new hire onboarding and fostering a culture where food safety is paramount among all team members. Additional administrative duties include coordinating ingredient and supply orders, managing inventory and schedules, and maintaining accurate records using various software and tools. Job Requirements
- 3 plus years experience in a USDA and/or FDA-regulated food manufacturing, commissary, or production kitchen
- strong working knowledge of HACCP, preventive controls, GMPs, sanitation programs
- experience with food safety verification activities such as swabs, logs, audits
- comfortable managing food safety and traceability software
- prior experience supervising or leading kitchen or production teams
- solid culinary skills and willingness to work hands-on in the kitchen
- highly organized, detail-oriented, process-driven
- strong communicator able to hold teams accountable while being supportive
- excited to grow with a mission-driven, fast-moving startup
- ServSafe Manager certification or willingness to obtain
- HACCP certification preferred or willingness to obtain
- PCQI certification preferred or willingness to obtain
- ability to stand for long periods
- ability to lift 40 to 50 lbs
- comfortable working early mornings or weekends as needed
Job Qualifications
- Minimum 3 years experience in USDA and/or FDA-regulated food manufacturing, commissary, or production kitchen
- strong working knowledge of HACCP, Preventive Controls, GMPs, and sanitation programs
- proven experience conducting food safety verification activities such as swabs, logs, and audits
- comfortable managing food safety and traceability software
- prior supervisory or leadership experience in kitchen or production teams
- solid culinary skills with willingness to work hands-on
- highly organized and detail-oriented
- strong communication and team accountability skills
- ServSafe Manager certification or willingness to obtain
- HACCP certification preferred or willingness to obtain
- PCQI certification preferred or willingness to obtain
Job Duties
- Own day-to-day USDA and FDA food safety compliance for the commissary kitchen
- manage and maintain HACCP and Preventive Controls Food Safety Plans
- ensure accurate execution of CCP monitoring, preventive controls, corrective actions, verification and validation activities
- conduct and document environmental monitoring, sanitation verification, cleaning and chemical concentration checks
- lead internal food safety audits and prepare for USDA, FDA, and third-party inspections
- manage food safety software systems to trace ingredients, track lot codes and batch production, enabling product traceability and recall readiness
- maintain training records and ensure team compliance with food safety requirements
- oversee daily QA/QC checks on production runs
- verify product labeling accuracy, allergens, weights, and packaging integrity
- monitor shelf life, cold chain integrity, and storage conditions
- investigate and resolve quality or food safety deviations
- partner with Executive Chef to improve product consistency and quality
- supervise and support kitchen production team during daily operations
- ensure SOPs are followed consistently
- be hands-on in cooking, prep, and packaging
- coach and train team on food safety, sanitation, and production standards
- help onboard new hires and reinforce food safety culture
- assist with ingredient and supply ordering, inventory counts, scheduling, and labor coordination
- maintain accurate digital records using various software
- support documentation development including SOPs, training materials, checklists, and logs
- act as communication bridge between kitchen staff and leadership
