The role of Assistant Food & Beverage Manager at The Ritz-Carlton, Chicago is an essential leadership position that embodies the hotel's commitment to delivering unparalleled dining experiences within its restaurant, bar, room service, and catering operations. This full-time position offers a competitive annual salary range between $63,000 and $65,000. As an Assistant Food & Beverage Manager, you will play a vital role in ensuring that every guest enjoys a seamless, polished, and personalized dining experience. You will work closely with service teams to maintain the highest service standards, assist in staff training, and manage daily operations in alignment with the Ritz-Carlton’s legendary brand standards.

Your responsibilities will include managing updates to menus, coordinating promotions, overseeing guest satisfaction, and ensuring compliance with beverage and liquor control procedures, as well as liquor laws. You will contribute to the overall financial health of the food and beverage department by managing costs and budgets while driving consistent service excellence. Job Requirements

  • More than two years of post high school education
  • valid unexpired Manager Food Handlers Certification
  • valid unexpired TIPS Basset Certification
  • one to two years of employment in a related position with this company or other organizations
  • excellent comprehension for assisting with guest and associate matters
  • vision required for seating guests, expediting food, cleaning equipment, reading floor plans, charts, schedules
  • excellent oral communication for communicating with guests and associates, issuing instructions and communicating policies
  • excellent comprehension required to read and implement policies and procedures
  • knowledge of chemicals/agents for training purposes

Job Qualifications

Job Duties

  • Assist in overall supervision of the department as outlined in manager's job description
  • complete environmental checklist for dining room
  • spot check liquor pars
  • order daily supplies
  • hold pre-meal meetings
  • follow up on established training steps
  • handle guest comments and complaints and ensure guest satisfaction
  • stay on the floor during peak hours
  • communicate with guests and receive feedback
  • observe, teach and correct staff's service
  • monitor each guest experience
  • examine food preparation and beverage presentation
  • maintain condition of dining room, lobby lounge, morsels, mini bar and room service
  • assist manager in scheduling, completing weekly payroll, and forecasting both weekly and monthly
  • participate in recruitment, management and discipline of associates as needed
  • prepare maintenance request and follow-up
  • monitor food and liquor requisitions and food waste
  • check bar controls, shot glass use, red lining, and bottles totally empty daily
  • must be familiar with and adhere to all liquor liability laws
  • must know emergency procedures and work to prevent accidents
