The Assistant Food and Beverage Manager position at Legends Global Knoxville is a vital role responsible for supporting the Food & Beverage Manager in overseeing daily operations. This role supervises both full-time and part-time banquet servers, bartenders, concessionaires, and contract personnel to ensure seamless event execution. The Assistant Manager actively participates in planning and orchestrating catering and concession events, guaranteeing that every detail aligns with client expectations and company standards.

Job Requirements
- College degree or equivalent work experience
- ServSafe certification or obtainable within 90 days
- TABC card or obtainable within 90 days
- Ability to pass criminal background check
- Ability to pass and maintain PCI compliance
- Strong communication skills
- Ability to work extended and irregular hours including nights, weekends, and holidays
- Physical ability to stand, walk, stoop, lift up to 50 pounds
- Good organizational and multitasking skills

Job Duties
- Supervise, direct and train all banquet personnel including but not limited to hourly servers, bartenders, concessionaires and banquet captains
- Ensure proper setup of event rooms related to food and beverage according to event diagrams and communicate adjustments with event services staff
- Assist in coordinating rental of equipment, beverages, and linen
- Coordinate and supervise execution of all banquet functions to meet client specifications
- Manage labor, beverage and ancillary costs for events and report to Catering Sales and Food & Beverage Director
- Oversee proper uniform appearance and productivity of the service team
- Monitor client needs throughout events and communicate changes to culinary, catering sales, and event services departments
- Assist in hiring, disciplining and terminating part-time food and beverage staff in accordance with company policies
- Maintain payroll for all direct reports according to Legends guidelines and legal requirements
- Organize concession services including staffing, schedule, menu selection, stand layout, cleaning, register and menu board programming
- Determine cash room needs for all food and beverage related events and communicate to Finance Department
- Perform other duties as assigned
