Legends Global Knoxville currently has an excellent and immediate opening for an Assistant Food and Beverage Manager at the Knoxville Convention Center. This position plays a crucial role within the Food and Beverage Department, overseeing both full-time and part-time banquet servers as well as contracted personnel. Reporting directly to the Food and Beverage Manager, the Assistant Manager is responsible for the planning and execution of catering and concessions events, ensuring that the highest standards of service and quality are consistently maintained.
The role requires accountability for meeting goals and adhering to budgets established by the Food and Beverage Manager. Beyond supervising staff, the Assistant Manager manages labor, beverage, and ancillary costs for events based on event needs, revenue, and budgeting. This role demands strong leadership skills to train, direct, and help maintain productivity and efficiency among the service team, including servers, bartenders, concessionaires, and banquet captains. The Assistant Manager ensures client satisfaction by monitoring guest needs throughout the events and facilitating communication among culinary, catering sales, and event services departments.
Additionally, the position involves coordinating event room setups according to event diagrams, assisting with rental and other logistical arrangements, and overseeing concession services such as staffing, menu selections, and stand layouts. The Assistant Manager is also responsible for personnel management duties such as hiring, disciplining, and terminating part-time staff while maintaining payroll in compliance with company and legal guidelines. Job Duties
- Supervise direct and train all banquet personnel including hourly servers bartenders concessionaires and banquet captains
- Ensure proper setup of event rooms related to food and beverage according to event diagrams and communicate necessary adjustments with event services staff
- Assist in coordinating additional event arrangements such as rental equipment beverages and linen
- Coordinate and supervise execution of all banquet functions ensuring client specifications are met
- Manage labor beverage and ancillary costs for events based on event needs event revenue yearly budget and pre-event costing sheet and report to catering sales and food and beverage director
- Oversee proper uniform appearance of the service team
- Monitor client needs throughout events to ensure customer satisfaction and communicate changes to culinary catering sales and event services departments
- Assist in hiring discipline and terminating food and beverage part-time staff in accordance with company policies and procedures
- Maintain payroll for all direct reports following guidelines and legal requirements
- Organize concession services including staffing event schedule menu selection stand layout cleaning register and menu board programming
- Determine cash room needs for all food and beverage events and communicate with finance department
