The Assistant Food & Beverage (F&B) Manager at Surety Hotel plays a critical leadership role in maintaining the excellence of the hotel’s food and beverage operations. Reporting directly to the Food & Beverage Manager, this position demands a strategic yet hands-on leader who thrives in a fast-paced, high-pressure environment. The Assistant F&B Manager will oversee operations across multiple service areas, including the restaurant, bar, cafe, in-room dining, and banquet services, driving seamless execution from breakfast through dinner and special events.

This role is pivotal in ensuring that every guest receives personalized and memorable experiences, whether in the Tavern, cafe, or during an event. The individual will serve as manager on duty during assigned shifts, embodying the company’s culture and standards by actively engaging with associates and guests. The role requires a leader who is not only capable of managing operational details but also inspiring and motivating their team through coaching and collaboration.

As Surety Hotel is part of a rapidly growing Aparium Hotel Group, the Assistant F&B Manager must balance tactical execution with long-term strategic planning. The successful candidate will be deeply involved in driving initiatives that enhance guest satisfaction while maintaining cost controls and operational efficiencies. The position demands a high level of organizational skill, adaptability to unpredictable circumstances, and a positive and professional demeanor.

The Assistant F&B Manager will work closely with culinary teams to ensure cohesion between food quality and service excellence, while leveraging various hospitality technologies including reservation and point-of-sale systems.

Job Requirements

  • Passion for the people, place and culture of our community
  • love of restaurants and guest service
  • minimum of three years’ experience in food & beverage with at least one year in a supervisory or leadership role
  • proficient in Word, Excel and other applicable computer systems
  • working knowledge or ability to obtain knowledge in reservation systems like OpenTable and Tock
  • working knowledge or ability to obtain knowledge in POS systems like Micros, Silverware and Lightspeed
  • working knowledge or ability to obtain knowledge in reporting and inventory management tools like Avero, Beverager and Accubar
  • solid understanding of service standards, labor control, maintenance, merchandising and accounting
  • ability to obtain and maintain Alcohol Awareness certification (TIPS) and Food Handlers Certification (ServSafe) within 30 days of hire
  • thorough understanding of all food and beverage items offered including ingredients, methods of preparation and proper service standards
  • mastery of the full Steps of Service
  • working knowledge of wines and spirits with appetite to grow into expert level
  • ability to work varying schedules including nights, weekends and holidays
  • fluency in English both verbally and non-verbally
  • ability to stand and walk for extended periods of time
  • ability to push, pull, lift up to 50 lbs
  • ability to work in extreme temperatures like freezers (-10°F) and kitchens (+110°F) for one hour or more

Job Qualifications

Job Duties

  • Uphold and model the company’s principles of People, Place and Character
  • partner with the F&B Manager in recruitment, training, scheduling, supervising, coaching, and motivation of all Restaurant, Bar, Café, In-Room Dining and Banquets associates
  • serve as Manager on Duty for assigned shifts, managing pre-shift, service execution and post-shift recap
  • build and maintain strong guest and VIP relationships
  • review reservations and cover count reports to determine staffing levels and station assignments
  • assist in managing inventory, controlling breakage and loss of china, glass and silver
  • support daily POS hygiene, end-of-shift reconciliation, cash handling controls, and accurate ringing of all banquet and event covers
  • assist the F&B Manager with labor and cost-of-goods discipline including time-card audits, schedule adherence, and cost tracking
  • maintain regular communication with the F&B Management team to provide updates and align on priorities
