The Assistant Executive Steward is entrusted with the critical responsibility of overseeing the cleanliness and sanitation of kitchen areas and food preparation zones. This includes monitoring dish rooms, kitchen equipment, and service areas across various resort outlets such as the Marketplace Dish Room, Team Dining Room, 630 Park Steakhouse, Tony's of North Beach Italian Restaurant, and casino bars. The role entails supervising and training a sizable team of approximately 40 Team Members, including stewards and dishwashers, to uphold sanitation standards and ensure compliance with health regulations. This leadership component involves assigning daily tasks, managing schedules, and evaluating team performance to maintain an efficient and hazard-free working environment. A key focus of the Assistant Executive Steward is inventory management—tracking supplies such as cleaning chemicals, utensils, and banquet equipment—and collaborating with maintenance to address any issues promptly. The role further supports banquet functions by assisting in set-up and breakdown activities, ensuring all service ware and equipment are ready and available. In addition to operational duties, the Assistant Executive Steward is expected to contribute to fostering a safe workplace by conducting training programs on safety, sanitation, and proper food handling.

Job Requirements
- High school diploma or equivalent
- Minimum of 2 years experience in stewarding or kitchen supervision
- Knowledge of OSHA and Department of Health standards
- Ability to manage and lead a team of 40 or more
- Proficient in inventory control and maintenance coordination
- Strong attention to detail
- Ability to communicate effectively with staff and management

- Monitor and maintain cleanliness, sanitation, and organization of kitchen and dish room areas
- Prepare and distribute assignments to kitchen workers ensuring health standards are met
- Ensure kitchens and equipment comply with Department of Health, OSHA, and resort standards
- Monitor and document any issues and submit maintenance orders
- Maintain inventory levels of cleaning chemicals, utensils, and supplies
- Evaluate and oversee job performance of team members
- Set schedules and job duties for proper staffing
- Ensure managers conduct daily team huddles and maintain communication boards
- Oversee maintenance and inventory of banquet equipment, china, glass, and silver
- Supervise team of 40 members including hiring, training, and evaluating
- Support kitchen and banquet daily event setups

- Maintain chemical and cleaning supplies inventory with weekly audits
- Assist banquet and executive chef with event setups and breakdowns
