The role of Assistant Executive Kitchen Manager (AEKM) at Din Tai Fung North America is a pivotal leadership position designed to support and ensure the operational success of the kitchen team. Located at 567 Fulton St., Brooklyn, NY, this full-time position offers a highly competitive salary range of $121,700 to $152,100 annually, with additional eligibility for an annual incentive plan based on both individual and company performance. The base salary may vary considering factors such as prior experience, relevant expertise, and market conditions, offering a transparent and comprehensive compensation package.
As an Assistant Executive Kitchen Manager, the individual will be responsible for managing the daily kitchen operations under the guidance of the Executive Kitchen Manager (EKM). This includes overseeing food safety compliance, maintaining brand standards, and promoting operational excellence in all facets of kitchen management. The AEKM will have a significant role in leading teams, from scheduling to coaching, training, and performance evaluation, fostering a productive and engaged workforce. Daily duties will span from workforce management and recruitment to inventory control and quality assurance, all while ensuring seamless communication among staff and alignment with company goals.
Beyond operational oversight, this role involves strategic planning, such as collaborating on staffing needs, cost of goods (COG) management, and monitoring key performance indicators (KPIs) to support both financial and service objectives. The position also entails technical skills oversight, ensuring team members are proficient in all critical kitchen stations, including wok, noodle, and prep areas. Coaching, mentoring, and developing managers and team members to meet Din Tai Fung's high standards is a core component of this role.

Job Requirements
- High school diploma or equivalent
- 2+ years restaurant management experience in casual or upscale casual dining
- Strong financial acumen
- High level understanding of inventory and ordering processes
- Sitting minimal
- Standing up to 3 hours
- Lifting up to 50lbs
- Temperature ranges from refrigeration temp to hot line temps
Job Qualifications
- High school diploma or equivalent
- 2+ years restaurant management experience in casual or upscale casual dining
- Strong financial acumen
- High level understanding of inventory and ordering processes
- Bilingual English and Spanish preferred but not required
- Bachelor’s degree preferred
Job Duties
- Validate scheduling for EKM review
- Submit people transactions such as promotions and demotions
- Participate in investigations in partnership with HR
- Coach and document performance and corrective actions
- Develop managers
- Conduct interviews and make hiring decisions for non-exempt BOH staff
- Assist with hiring process for managerial roles
- Work with managers on Zenput task lists
- Ensure operational needs are met including ordering, par levels, and inventory management
- Teach and maintain brand standards
- Update team on rollouts, promotions, and changes
- Collaborate with EKM to create staffing and planning needs for BOH
- Assist in implementing COG and KPI action plans
- Train and coach the team on food safety
- Maintain compliance with health department protocols
- Implement and follow up on Ecosure Action Plan
- Prepare and review manager meeting decks for EKM
- Follow up on facilities needs
- Ensure food safety and quality standards are met
- Ensure team certification and up to date training on key stations including wok, noodle, and prep
