P.F. Chang's is currently hiring for the role of Assistant Executive Chef, also known as the Assistant Kitchen Culinary Manager, Kitchen Manager, Culinary Manager, or Senior Kitchen Manager. This is a full-time, non-exempt position with an annual salary range of $77,992.20 to $98,012.20, or an hourly rate between $27.27 and $34.27 based on experience, assuming a 50-hour work week.

The Assistant Executive Chef plays a critical role in managing the restaurant's culinary operations, ensuring that high standards of food quality, safety, and service are consistently met. This role is essential in supporting the Executive Chef or Kitchen Manager by overseeing day-to-day kitchen functions, managing inventory and food costs, supervising and training kitchen staff, and maintaining operational excellence. The Assistant Executive Chef is expected to be hands-on, working closely with the culinary team in a fast-paced, high-volume environment while ensuring that the kitchen operates efficiently and safely.

This leadership position involves significant responsibility in hiring, developing, and mentoring culinary team members, as well as managing schedules, food preparation standards, and compliance with safety certifications. The Assistant Executive Chef must be proficient in all kitchen stations and accountable for creating a clean and safe work environment for both team members and guests.

Job Requirements

  • Two plus years of culinary management experience with experience managing and writing prep lists
  • Must possess a valid driver’s license for occasional duties
  • Experience working in a hands-on, fast paced, high volume environment
  • Experience managing a team and developing employees for leadership
  • Experience facilitating and executing an effective training program
  • Effective communication and organizational skills
  • Understanding of managing inventory, cost of goods and overall financial control
  • Must be able to stand and walk for eight to ten hours per shift
  • Must be able to reach, bend, balance, and transport objects weighing up to 30 pounds and occasionally up to 50 pounds
  • Must be able to work in various temperature levels including warm to very warm conditions in the kitchen

Job Qualifications

  • Two or more years of culinary management experience
  • Experience writing prep lists
  • Proven ability to manage and develop a kitchen team
  • Skilled in facilitating and executing training programs
  • Effective communication and organizational skills
  • Understanding of inventory management and cost control
  • Ability to work in a fast-paced, high-volume kitchen
  • Valid driver’s license for operational duties
  • Physical ability to stand, walk, bend, and lift up to 50 pounds
  • Experience in casual or upscale dining preferred
  • Bilingual in English and Spanish preferred
  • Experience working within a restaurant chain or franchise environment preferred

Job Duties

  • Accountable for operational excellence in the kitchen
  • Delegates tasks and gives direction to all kitchen staff
  • Conducts initial interviews with kitchen management and staff candidates
  • Selects, orients, and continually develops all Sous Chefs and kitchen staff
  • Prepares work schedules for Sous Chefs and kitchen staff
  • Maintains safety certification requirements for all kitchen staff
  • Supervises and facilitates training for all food preparation and menu execution
  • Maintains all product quality standards
  • Manages food costs and inventory
  • Ensures proper timing and production of food orders
  • Conducts ongoing performance appraisals for kitchen staff
  • Enforces dress code standards
  • Oversees prep lists and ordering guides
  • Completes opening and closing checklists
  • Maintains and coordinates repairs of kitchen equipment and facilities
  • Proficiently operates all kitchen stations
  • Provides a clean and safe environment for team members and guests
