Job Requirements

  • High school diploma or equivalent experience
  • Minimum 2-3 years management experience in food and beverage
  • Experience with procurement and inventory control systems and procedures
  • Flexible scheduling including nights, weekends, and holidays
  • Excellent writing and verbal communication skills
  • Proficient in P&L management and controls
  • Strong analytical skills to interpret key business indicators
  • Demonstrated experience leading teams to achieve or exceed goals
  • Strong attention to detail and time management skills
  • Proficiency with desktop hospitality software such as Microsoft Office, payroll systems, and POS
  • Successful completion of criminal background check and drug screen
  • Highly proficient in food safety and sanitation practices, rules and regulations
  • Experience with guest satisfaction and employee engagement programs and tools.

Job Duties

  • Assist the Director in overseeing daily functions of Food and Beverage administration and planning
  • Help team achieve operational objectives by contributing to strategic plans and implementing productivity and quality standards
  • Participate in recruiting, hiring, training, scheduling, coaching, and counseling staff
  • Assign, audit, and ensure compliance with training courses in Great Wolf University
  • Collaborate with leadership on staff development, training, and succession planning
  • Lead frontline staff to meet guest needs ensuring maximum satisfaction
  • Oversee food and beverage preparation, presentation, and timeliness in all venues adhering to recipe and quality standards
  • Collaborate with Executive Chef and Purchasing Team for storeroom and inventory organization
  • Control cost of goods sold through portion control and minimizing waste
  • Ensure compliance with food safety, cleanliness, sanitation, and internal safety audits
  • Coordinate scheduling and payroll activities with leadership and HR
  • Monitor equipment operation and call for repairs as necessary
  • Participate in inventory procedures to maintain budgeted costs and par levels
  • Conduct department pre-shift meetings and service audits
  • Support Culinary, Stewarding, and Purchasing functions and budget oversight
  • Ensure training on safety data sheets and regulatory compliance
  • Ensure lodge compliance with local health and alcohol regulations
  • Maintain safety inspection standards and implement corrective measures.
