Artisserie is a high-end bakery and dining concept founded by the classically trained patissiere Chef Vitaliya Popovych, with two locations situated in Portland's Pearl District and Downtown Lake Oswego. Known for its exquisite pastries and innovative dining experiences, Artisserie marries the art of traditional French patisserie techniques with contemporary culinary creativity. This position is for an Operations Assistant who plays a critical role bridging the gap between production and retail, ensuring smooth workflows, high-quality standards, and effective team management. The Operations Assistant will focus on growing Artisserie’s dinner business, particularly at the Lake Oswego location. This role is integral to maintaining the integrity and artistry that define the brand while driving operational efficiency and sales growth. The candidate must be hands-on, strategic, and an excellent communicator to manage a talented team and build cohesive relationships between production and retail teams.
The role involves overseeing daily wholesale production scheduling, managing fulfillment, and maintaining quality across both Artissierie locations. The Operations Assistant will optimize production processes to improve food cost control, reduce waste, and enhance labor efficiency. Managing and developing the production team is a key responsibility, with duties including hiring, training, scheduling, performance management, and employee relations. The person in this position will support bakery managers and supervisors, ensuring adherence to operational standards and addressing challenges with proactive problem-solving.
A significant part of this role is growing the dinner service at the Lake Oswego site. The Operations Assistant will own revenue growth initiatives, refine menu execution, and aim to elevate the overall guest experience, working closely with Chef Vitaliya on product standards, seasonal transitions, and custom orders. Compliance with safety regulations, food safety protocols, and equipment maintenance is critical to this role.
This is a contract-to-hire position, initially offered for three months with the opportunity to transition into a permanent full-time role upon meeting specific metrics. Success will be measured by improvements in wholesale efficiency, production flow, team retention, dinner revenue growth, and the strength of collaboration between production and retail teams. This position requires a committed individual who can work approximately 45 hours per week, including early mornings, evenings, weekends, and holidays, with flexibility to travel between Portland and Lake Oswego locations. Job Requirements
- 3 plus years management experience in food production, bakery, or culinary operations
- Experience in both front of house and back of house operations
- Proven track record in production scheduling, labor budgets, and food cost controls
- Strong leadership skills with hiring, training, scheduling, and accountability
- ServSafe certified or can obtain upon hire
- Open availability including early mornings, evenings, weekends, and holidays
- Comfortable traveling between Portland and Lake Oswego locations

Job Duties
