Job Requirements

- For Assistant Cook II, one year of experience in institutional large food/dietary service department
- Ability to work overtime, weekends, holidays, and various shifts
- Physical ability to lift and carry supplies up to 50 pounds
- Maintain confidentiality and a professional attitude
- Comply with safety and sanitation standards
- Some positions may require a valid California Driver's License and insurance qualifications
- Ability to work under fluctuating temperature conditions and extended periods of standing
- Must be able to use kitchen equipment safely and efficiently
Job Qualifications
- High school graduate or GED equivalency
- One year experience working in a large food/dietary service department in an institutional facility for Assistant Cook II
- Knowledge of large scale food preparation and storage
- Understanding of sanitation, safety, and personal hygiene practices
- Ability to follow written and verbal instructions
- Ability to read and understand therapeutic diet instructions
- Ability to maintain inventory and perform basic math calculations
- Ability to write simple reports and maintain production records for Assistant Cook II
- Physical ability to lift up to 50 pounds and perform various physical tasks
- Good moral character with no felony convictions

Job Duties
- Clean and prepare vegetables and fruits
- Operate kitchen equipment including microwave, coffee machines, blender, mixers, and meat slicer
- Prepare sandwiches, coffee, custards, and gelatins
- Serve food in a cafeteria setting
- Prepare meals in accordance with the therapeutic diet manual
- Perform cleaning and custodial duties such as washing dishes, pots, pans, and kitchen utensils
- Load, unload, operate and clean dishwasher
- Mop floors
- Clean and sanitize all kitchen surfaces and refrigerator walls and floors
- Dispose of garbage
- Store, rotate, and distribute food and supplies
- Prepare and serve between meal nourishment
- Transport food to appropriate destinations
- Confer with Food Service Supervisor on duties, standards, and procedures
- Check menus and food trays for diet compliance and presentation
- Prepare daily tallies and maintain production records
- Assist in staff scheduling and training
- Oversee proper kitchen equipment operation and sanitation standards
- Serve as designated in charge in the absence of supervisors
- Provide input for personnel evaluations
- Assist in various food preparation areas including cook/chill, bakery, prep room, and catering events
- Fill in for Assistant Cook I when necessary
