The Assistant Cook I is an entry-level position within the Probation Department's food service operation, designed for individuals ready to perform routine and less skilled tasks to support meal preparation and service. Under immediate supervision, the Assistant Cook I assists in preparing and serving food to staff and inmates while ensuring cleanliness and sanitation of kitchen utensils, equipment, and work areas. This role is crucial to maintaining a hygienic food service environment and contributing to efficient kitchen operations. Responsibilities include preparing simple food items such as sandwiches, coffee, custards, and gelatins, operating kitchen equipment like microwaves and mixers, and serving food in a cafeteria setting. Job Requirements
- High school graduate or GED equivalency
- pass a thorough background investigation
- no felony convictions
- must be of good moral character without convictions punishable by imprisonment in federal penitentiary or state prison
- ability to perform job duties safely
- maintain confidentiality according to legal standards and county regulations
- ability to lift, carry, or push up to 50 pounds
- availability for overtime, standby, shift, callback, weekend, and holiday assignments as required
- meet county insurability requirements if a valid California Driver’s License is necessary
Job Qualifications
- Knowledge of methods, procedures, materials and equipment involved in large scale food preparation and storage
- knowledge of use and care of kitchen utensils and equipment
- understanding of sanitation and personal hygiene principles related to food preparation and service
- ability to follow simple verbal and written instructions
- ability to read English sufficiently to understand instructions regarding therapeutic diets, production work sheets and recipes
- ability to work under fluctuating temperature conditions
- ability to lift, carry or push supplies and equipment up to 50 pounds
- maintain a professional attitude working with inmates and staff
- ability to learn large scale food preparation and handling special or modified diets
- ability to quickly and efficiently utilize kitchen equipment
- ability to prepare, arrange, and serve large quantities of food attractively
- knowledge of proper food temperatures
- ability to properly measure and record food amounts
Job Duties
- Clean and prepare vegetables and fruits
- operate kitchen equipment including microwave, coffee machines, blender, mixers, and meat slicer
- prepare sandwiches, coffee, custards, and gelatins
- serve food in a cafeteria setting
- prepare meals in accordance with the therapeutic diet manual
- perform a variety of cleaning and custodial work such as washing dishes, pots, pans, and kitchen utensils
- load, unload, operate and clean dishwasher
- mop floors
- clean and sanitize all kitchen surfaces and refrigerator walls and floors
- dispose of garbage in compactor or dumpsters
- store, rotate, and distribute food and supplies
- prepare and serve between meal nourishment
- transport food to appropriate destinations, which may require loading and unloading
