The Assistant Pastry Chef role at Wynn Resorts plays a pivotal part in maintaining the high standards for which the company is known. This position is integral to the culinary team, specializing in pastry arts and dessert production for the various outlets within the resort. The Assistant Pastry Chef supports the Executive Chef by managing cost control measures, overseeing inventory, and assisting in food requisitions to ensure efficient kitchen operations. Beyond administrative duties, this role involves managing and training pastry kitchen staff to foster a skilled and cohesive team committed to delivering consistent quality.

A significant responsibility of the Assistant Pastry Chef includes supervising the production of pastries and desserts, ensuring that every item meets the company's rigorous quality standards. This requires a deep understanding of various pastry techniques, creativity, and attention to detail. Job Requirements

  • high school diploma or equivalent
  • minimum 4 years of relevant experience in pastry production
  • at least 2 years of supervisory experience
  • strong communication skills in English
  • knowledge of food safety and sanitation standards
  • ability to manage kitchen staff
  • ability to work flexible hours including weekends and holidays
  • physical ability to stand for long periods and perform kitchen duties
  • must have or be able to obtain necessary work permits or licenses if applicable

Job Qualifications

  • ability to communicate, read and write in English fluently and professionally
  • 2nd language a plus
  • 4 years experience in a high volume/high quality pastry production kitchen
  • minimum of 2 years in a supervisory role
  • banquet and catering pastry training degree preferred
  • culinary/pastry training degree preferred but not required
  • advanced knowledge of pastries, desserts, sanitation and cost control
  • ability to manage all aspects of a pastry operation
  • ability to work efficiently within a team environment
  • must be able to obtain and maintain any required licensing or active work cards

Job Duties

  • support the Executive Chef in all aspects of cost control
  • complete inventories and food requisitions
  • manage and train kitchen staff
  • support the Chef de Parties and cooks if necessary
  • supervise the production of pastries and desserts for outlets
  • ensure food quality according to department standards
  • maintain cleanliness and sanitation of work areas and equipment in accordance with Health Department standards
