The role of Assistant Baker at Bern's Steak House is a vital position within the bakery section of the kitchen. Reporting directly to the Head Bakery Chef and Executive Chef, the Assistant Baker assists in the operation and production of bakery items that meet the company's high standards. This is a high-volume culinary environment where quality, consistency, and efficiency are paramount. The Assistant Baker is responsible for preparing a variety of baked goods including artisan breads, rolls, muffins, laminated Danish pastries, croissants, doughnuts, and other specialty menu items requested by the chefs.

The individual in this role must demonstrate a strong attention to detail, maintain excellent quality control throughout the baking process, and adhere to proper food handling and safety practices. Responsibilities also include monitoring equipment, reporting any maintenance issues or safety hazards, and ensuring cleanliness and organization of the bakery workspace. Bern's Steak House requires its bakery staff to operate efficiently under pressure, multitask in a fast-paced environment, and work well with others as part of a team committed to excellence.

Ideal candidates will have a minimum of 2 years of baking experience in a high-volume food production setting. A high school diploma is required, while a degree or background in Culinary Arts or Hospitality is preferred but not mandatory. Knowledge of starters, fermentation techniques, laminated doughs, grains, and milling is important for success in this role. Candidates should also have a positive, guest-focused attitude, good communication skills, and the physical ability to meet the demands of the job, including standing for extended periods, lifting up to 50 pounds, and working varied shifts including weekends and holidays.

Job Requirements

  • High school diploma required
  • minimum of 2 years of experience in baking with high volume food production
  • knowledge of starters, cultures, and fermentation
  • knowledge of laminated doughs
  • basic understanding of grains and milling
  • possess professional disposition with good communication and interpersonal skills
  • ability to work a variety of shifts including weekends, holidays, and evenings

Job Duties

  • Work day-to-day operations of the bakery section of the kitchen
  • prepare a wide variety of goods such as breads and/or specialty menu items for company chef's request
  • able to produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated Danish, laminated croissants, and doughnuts
  • ensure excellent quality of products
  • follow proper handling and right temperature of all food products throughout the entire shift
  • check the quality of raw and cooked food products to ensure that standards are met
  • report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately
  • attend all scheduled employee meetings
