The role available is for a Pastry Team Leader, responsible for managing the line-level pastry team under the Pastry Chef's direction to ensure the highest standards of quality, morale, and food cost control. This position is fundamental within the kitchen management team and requires leadership capabilities in overseeing a team of up to 10 pastry cooks. The Pastry Team Leader will execute the vision set forth by the Pastry Chef by maintaining cleanliness and organization of the bakeshop, managing the communication and ordering of all pastry-specific supplies and equipment, and ensuring proper rotation and monitoring of raw and finished products. The incumbent will also manage dessert production and inventory rotation to meet food cost goals and assist in menu development.
This position demands hands-on involvement in team training and development to ensure progress through the tiered system of skill advancement. The Pastry Team Leader will complete monthly inventories, ensuring compliance with all company policies and procedures while fostering regular and consistent attendance. The role requires the ability to work collaboratively with other team members, managers, and interact positively with guests. Physical demands include the ability to lift heavy items (up to fifty pounds), stand for extended periods, and perform tasks that require bending, stooping, and reaching.
A successful candidate will bring at least 3 years of experience in restaurant pastry or culinary education, along with at least one year of direct pastry or restaurant experience. Strong communication skills are required, including the ability to write and speak clearly and effectively as well as compose recipes. The role also demands a solid grasp of mathematical skills for converting recipe quantities and measurements accurately. Additionally, reasoning ability is essential for exercising judgment and making decisions aligned with company goals. The work environment is a fully equipped bakeshop staffed by multiple team members, necessitating collaboration and sharing of resources. Occasionally, the role may involve working outdoors in various weather conditions. Job Qualifications
