Kessler Hospitality is currently seeking a full-time Pastry Cook to join the culinary team at the Grand Bohemian Lodge. This role plays a vital part in maintaining the high standards of quality and presentation associated with Kessler Hospitality’s culinary offerings. The Pastry Cook will be responsible for preparing and baking a variety of desserts, breads, and pastries that meet food handling and quality assurance standards while ensuring guest satisfaction. This position demands precision, creativity, and a passion for culinary arts, particularly pastry and baking.

The ideal candidate will follow established recipes to efficiently create exquisite desserts and accommodate special guest requests with a refined understanding of pastry techniques. Responsibilities include measuring and mixing ingredients, preparing pie fillings, custards, and other fillings, regulating oven temperatures, decorating cakes and pastries, and ensuring the organization and cleanliness of all food preparation areas in accordance with health and safety standards. The Pastry Cook also plays a key role in inventory management by monitoring supplies and communicating the need for goods to kitchen leadership.

This position requires a strong work ethic, attention to detail, and the ability to maintain a neat and organized workspace. The Pastry Cook must be capable of multitasking in a fast-paced kitchen environment, display a professional appearance, and adhere strictly to safety and sanitation protocols. Effective communication and the willingness to participate in cross-training and team activities are essential for success in this role. Job Requirements

  • Culinary, pastry or baking degree or related training preferred
  • Minimum 1 year of relevant work experience required
  • Food safety certification preferred or to be attained within 30 days
  • Understanding of safety, sanitation and food handling procedures
  • Familiarity with kitchen equipment use and cleaning
  • Ability to work safely in kitchen environment with high temperatures and humidity
  • Ability to lift and move up to 40 lbs regularly
  • Willingness to adapt to variable schedules and work more than 40 hours
  • Ability to multitask and effectively communicate
  • Ability to maintain professional appearance and hygiene
  • Comfortable working in a busy and noisy environment
  • Must work independently and collaboratively in a team environment

Job Qualifications

  • Culinary, pastry or baking degree or related training preferred
  • Minimum 1 year of relevant work experience required
  • Experience in luxury brand or markets preferred
  • Food safety certification preferred or to be attained within 30 days
  • Knowledge of safety, sanitation and food handling procedures
  • Basic knowledge of kitchen production and operations
  • Familiar with proper use and cleaning of kitchen equipment
  • Basic baking and pastry production knowledge
  • Effective communication and multitasking skills
  • Proficient in handling culinary knives and tools
  • Basic computer skills including Microsoft Word, Excel, Outlook and POS systems
  • Comfortable working in a noisy shared environment
  • Ability to handle changing priorities and deadlines
  • Must work safely in high temperature, high humidity environment
  • Ability to work independently and in a team
  • Flexibility to work variable schedules exceeding 40 hours
  • Ability to push, pull and lift up to 40 lbs daily

Job Duties

  • Follow recipes to prepare and present desserts, pastries and breads including special guest requests
  • Check restaurant par list to ensure adequate prep for shift
  • Measure and mix ingredients for dough or batter
  • Prepare and cook ingredients for pie fillings, puddings, custards and other desserts
  • Adjust oven temperatures by regulating drafts or thermostatic controls
  • Mix ingredients to make icings
  • Decorate cakes and pastries
  • Complete equipment checklist and report any issues
  • Rotate food in coolers and freezers to minimize waste and spoilage
  • Maintain cleanliness of all food prep areas
  • Communicate inventory needs to kitchen leadership
  • Read, understand and produce timely work
  • Maintain knowledge of menu items
  • Keep work area neat and adhere to sanitation standards
  • Maintain professional appearance
  • Comply with safety and security policies and report unsafe conditions
  • Adhere to safety rules for equipment use
  • Attend training and meetings
  • Perform cross-training tasks
  • Greet and interact warmly with guests
  • Perform all other assigned duties
