The position of AM Baker at The Department is a pivotal role within the kitchen team, reporting directly to the Executive Pastry Chef. This full-time role focuses extensively on bread production that supports various functions including internal banquets, offsite events, and the Atrium Cafe. The AM Baker is responsible for maintaining the highest standards of food quality and sanitation, ensuring that every product meets the establishment's rigorous criteria. Beyond the technical baking skills, this position requires strong organizational abilities to manage production schedules, inventory controls, and adherence to food safety protocols.   • 3-4 years of baking or related experience or equivalent combination of education and hands-on training
  • ability to read and follow recipes, production schedules and food safety guidelines
  • strong communication skills for working effectively with team members and supervisors
  • proficient in measuring ingredients accurately and scaling recipes using basic math and ratios
  • problem-solving skills with ability to adjust processes based on production needs and ingredient variations
  • ability to follow written and verbal instructions in fast-paced environment
  • strong attention to detail to ensure product consistency and quality
  • ability to work independently and as part of a team
  • reliable attendance and punctuality including early morning or weekend shifts as needed

Job Duties

  • 100% production and execution work in the pastry kitchen
  • execute menus, recipes and preparations for all food
  • ensure high standards of sanitation, cleanliness and safety in all kitchen areas
  • follow procedures and controls to minimize food and supply waste and theft
  • assure consistency and high quality to minimize food costs by exercising portion control
  • prepare the daily list of tasks and items requiring skillful preparation
  • evaluate products to ensure quality standards are met
  • maintain a regular cleaning and maintenance schedule for kitchen areas and equipment
  • complete all required HR paperwork including disciplinary records and food handler's cards
  • support safe work habits and maintain a safe working environment
  • maintain operational checklists
  • listen to staff feedback and enact changes to maximize efficiency and quality
  • maintain service standards and product knowledge
  • create a positive working environment
  • close the kitchen ensuring proper labeling and cleanliness
  • assist staff during service to ensure guest satisfaction and efficiency
  • perform other duties as directed
