The Food Service Specialist is responsible for planning menus, preparing and serving food, and upholding standards of food safety and sanitation in various environments. Whether serving small groups or large units, in fixed facilities or field conditions, these specialists guarantee that every meal meets Army nutritional guidelines and safety protocols.

The role offers comprehensive training including 10 weeks of Basic Training to develop core Soldier skills, followed by nine weeks of Advanced Individual Training focused on culinary techniques and field kitchen management. This training covers everything from baking and frying to braising and sautéing according to Army-approved recipes, as well as equipment maintenance and food supply management. These skills not only fulfill military needs but also facilitate the pursuit of civilian culinary careers such as cook, chef, butcher, or baker.

Job Requirements

  • Military enlistment in the Army National Guard
  • Must be at least a junior in high school, or have a high school diploma or a GED certificate
  • Must be between the ages of 17 and 35
  • Must be able to pass a physical exam and meet legal and moral standards
  • Must meet citizenship requirements

Job Qualifications

  • High school diploma or GED preferred
  • Basic cooking and food safety knowledge
  • Ability to follow detailed recipes and instructions
  • Strong attention to cleanliness and sanitation
  • Interest in cooking, home economics, health, mathematics, accounting, and chemistry
  • Capability to work under varying conditions including field environments
  • Good physical fitness to perform kitchen duties and equipment maintenance

Job Duties

  • Bake, fry, braise, boil, simmer, steam and saute as prescribed by Army recipes
  • Operate, maintain and clean field kitchen equipment
  • Perform preventive maintenance on garrison and field kitchen equipment
  • Plan and prepare standard and dietetic menus
  • Order food and supplies
  • Store meats, poultry and other perishable items appropriately
  • Ensure food safety and facility sanitation standards are met
