As a Food Service Specialist in the Army National Guard, you will assume a crucial role that directly impacts the well-being and readiness of your fellow soldiers. Your primary responsibility will be to plan, prepare, and serve nutritious meals that meet the dietary needs of soldiers in a variety of settings, whether in the field under challenging conditions or in established facilities. This position requires you to master various culinary techniques such as baking, frying, braising, boiling, simmering, steaming, and sautéing, all following Army-approved recipes and nutritional guidelines.

The training for this role includes 10 weeks of Basic Training for foundational soldiering skills followed by nine weeks of Advanced Individual Training (AIT), where you will learn both classroom theory and practical field experience. During your service, you will operate and maintain kitchen equipment, ensure food safety and sanitation standards, manage food supplies, and adhere to storage protocols specifically for meats, poultry, and other perishables. This comprehensive training not only prepares you for military duty but also equips you with valuable culinary and logistical skills transferrable to civilian careers in restaurants, cafeterias, catering companies, and other food service environments.

Job Requirements

  • Military enlistment in the Army National Guard
  • must be at least a junior in high school, or have a high school diploma or a GED certificate
  • must be between the ages of 17 and 35
  • must be able to pass a physical exam and meet legal and moral standards
  • must meet citizenship requirements

Job Qualifications

  • Interest in cooking, home economics, health, mathematics, accounting and chemistry
  • ability to follow Army recipes and nutritional guidelines
  • basic knowledge of food safety and sanitation
  • strong organizational skills
  • physical fitness to perform duties in field and fixed settings

Job Duties

  • Bake, fry, braise, boil, simmer, steam and saute as prescribed by Army recipes
  • operate, maintain and clean field kitchen equipment
  • perform preventive maintenance on garrison and field kitchen equipment
  • plan and prepare standard and dietetic menus
  • ensure food safety and facility sanitation
  • order and manage food supplies
  • store meats, poultry and other perishable items properly
