Job Requirements

  • Minimum high school diploma or equivalent
  • minimum four years of commercial kitchen experience in a lead role
  • able to work minimum six-day 70-hour week
  • must live on-site in rural and possibly shared living spaces
  • able to stand for long periods and lift 50 pounds
  • able to bend, stretch, and reach for extended periods
  • must be ServSafe Manager Certified
  • must obtain ServSafe Allergens Certification before camp start
  • ability to work under pressure in temperature-variable environments
  • cooking from scratch experience required

Job Qualifications

  • Minimum four years of commercial kitchen experience in a lead role
  • proficient in relevant culinary and management skills
  • quality-driven with ability to self-motivate
  • high level of computer literacy
  • recognized and uphold health department standards
  • able to lead teams and take direction
  • must be ServSafe Manager Certified
  • must possess ServSafe Allergens Certification before camp start
  • experience in institutional and batch cooking highly desired

Job Duties

  • Provide excellent guest service in an efficient manner
  • develop effective staff schedules based on business levels and budget
  • schedule and coordinate side work for personnel
  • maintain cleanliness and organization in the dining hall to sanitation standards
  • enforce appearance and uniform standards
  • oversee dining hall operations during meal periods
  • collaborate with chef on food presentation and sanitation
  • train and develop front-of-house dining staff
  • provide ongoing performance feedback to service personnel
  • communicate daily with Head Chef and Camp Directors
  • interact with diners for feedback
  • ensure dining hall readiness 15 minutes before service
  • implement checklist system for dining hall operation
  • follow environmental practices to minimize waste
  • know all menus and specifications
  • maintain dining hall standards constantly
  • comply with safety practices
  • prepare daily reports
  • communicate effectively with team members
  • motivate team and foster positive environment
  • attend training and staff meetings
  • understand food safety for special diets
  • professionally interact with campers, staff, and parents
  • control inventory and place orders
  • manage projects and communications
  • uphold company service and quality standards
  • maintain health department sanitation standards
  • manage staff and client relations
  • follow comprehensive food training program
  • use weights and measures to execute recipes
  • prepare menu items and special events
  • follow standardized recipes
  • ensure production accuracy in timing, quantity, quality, and plating
