The Sushi Chef role at AJ's Fine Foods is a pivotal position within the prepared foods department. This role involves assisting the Sushi Team Lead in achieving sales targets and customer satisfaction goals. The Sushi Chef is responsible for the production, stocking, merchandising, and inventory control of sushi products, ensuring that all items meet the highest quality and safety standards. The position requires a keen eye for detail, particularly related to food safety and sanitation, to maintain AJ's Fine Foods' reputation for quality. Daily tasks include filleting fish, preparing sushi to refill the sushi case, and handling customer orders with care and precision. The Sushi Chef also contributes creatively to menu planning and development, bringing new ideas and experimenting with current trends to delight customers with innovative sushi offerings. Additionally, compliance with health department regulations and weights and measures requirements is a critical aspect of the role. Job Requirements

  • Must be at least 18 years of age
  • Must be 21 years of age for any position that serves alcohol
  • Ability to stand for extended periods
  • Ability to lift and stock up to 50 pounds
  • Strong communication skills
  • Ability to comply with health department and weights and measures regulations
  • Must be able to operate a cash register correctly
  • Physical stamina for job demands

Job Qualifications

  • Experience working as a sushi chef or in a similar food preparation role
  • Knowledge of food safety and sanitation standards
  • Ability to fillet fish and prepare sushi accurately
  • Customer service skills
  • Creativity in menu planning and recipe development
  • Ability to work in a fast-paced environment
  • Basic cash handling skills

Job Duties

  • Responsible for production, ordering and receiving, merchandising, controlling inventory sanitation, and safety within the sushi department
  • Responsible for daily preparation work in the department, filleting fish, and preparing sushi to fill sushi case and customer orders while maintaining AJ’s quality standards
  • Assist with menu planning and development including creativity and experimentation with new trends and menu ideas and recipes for sushi
  • Ensure compliance with health department and weights and measures requirements
  • Maintain open communication with all members of the meat department
  • Maintain a high degree of cleanliness throughout preparation area
  • Must be able to correctly operate a cash register including proper cash handling and all forms of tender per company policy, e.g., cash, checks, credit cards ATM
  • All other related duties as assigned
