Job Requirements

  • Available for work on any day of the week or shift
  • some inter-island and mainland travel may be required
  • able to lift 10 pounds frequently and up to 60 pounds occasionally
  • able to perform wrist and hand motions, standing or walking up to 9 hours, reaching, bending, squatting, pushing and pulling frequently
  • must pass drug screening test
  • must pass pre-employment physical
  • must have passed TB test within two years of start date with skin test
  • able to work in temperatures ranging from 0 to 95 degrees
  • able to work around smoke produced during cooking
  • high school education or G.E.D. required
  • college degree preferred
  • three or more years of kitchen experience with leadership duties
  • understanding of kitchen equipment maintenance

  • three or more years of experience in varied kitchen positions with progressive leadership and management responsibilities
  • understanding of proper use and maintenance of major kitchen equipment including stoves, refrigeration, knives and dish machines

Job Duties

  • Promote, work, and act in a manner consistent with the mission of Zippy's Ka Hana Pono
  • monitor sanitation practices to ensure that employees follow standards and regulations
  • maintain appropriate cleaning schedules for kitchen floors, mats, walls, hood, equipment and food storage areas
  • check the quality of raw or cooked food products to ensure standards are met
  • control food costs and usage by following FIFO, produce storage procedures, standard recipes and waste control procedures
  • instruct cooks or other workers in food preparation, cooking, garnishing or presentation
  • supervise or coordinate activities of kitchen staff engaged in food preparation
  • ensure food and products are prepared and served according to recipes, portioning, cooking and serving standards
  • inspect supplies, equipment and work areas for conformity to standards
  • order food and supplies according to specifications and monitor deliveries
  • plan, direct, or supervise multiple kitchens or restaurants’ food preparation activities
  • coordinate planning, budgeting, or purchasing for all food operations
  • oversee and enforce restaurant policies regarding personnel and administer corrective actions as needed
  • provide continuous training on equipment use, cleanliness, sanitation, and safety practices
  • demonstrate new cooking techniques or equipment to staff
  • ensure all equipment is clean and maintained through inspections and preventative maintenance
  • prepare required paperwork including forms and schedules timely
  • attend employee and company meetings and suggest improvements
  • coordinate with other employees to meet guests’ needs and support restaurant operations
