The role of Yacht Chef at UnCruise Adventures is a key position that combines culinary expertise with strong leadership skills. The Yacht Chef is responsible for managing all aspects of the galley operations on board, including supervising staff, managing inventory, ordering supplies, and maintaining cleanliness standards—all under the guidance of the Hotel Manager. This position requires the ability to design and execute menus that cater to diverse dietary needs and preferences, including vegan, gluten-free, and allergy-sensitive options, ensuring every meal delivers exceptional quality and consistency.
As the culinary leader onboard, the Yacht Chef works closely with the Pastry Chef and Galley Utility to plan and prepare meals for both guests and crew, maintaining a high standard of food safety and hygiene. Beyond culinary duties, the chef plays a critical supervisory role, training new hires, evaluating staff performance, and fostering a positive and productive team environment. Adaptability and effective communication are essential, as the position demands flexibility with shifting schedules dictated by the dynamic nature of adventure cruising.
The physical demands of the role are significant, requiring stamina to work long shifts in sometimes challenging conditions, including working in confined spaces and navigating stairs and ladders. The chef must be prepared to live in close quarters with other crew members for extended periods—typically 6 to 8 weeks of continuous work followed by rotations ashore. In addition to culinary skills, the Yacht Chef must also be well-versed in safety and sanitation protocols, complying with CDC and FDA vessel sanitation requirements and participating in onboard safety drills and training exercises.
The compensation for this position includes a base pay of $254 per day plus a guaranteed tip amount of $70 per day, reflecting the company’s commitment to rewarding high-quality service. Job Requirements
- ServSafe Food Protection Manager Certification
- ServSafe Allergens Certification
- CPR, First Aid, and AED Certification
- Government ID (REAL ID compliant) or Passport
- Ability to work 12-hour shifts, 7 days a week for 6 to 8 weeks
- Physically able to perform frequent bending, reaching, twisting, kneeling, crawling, pushing, and pulling
- Ability to ascend and descend stairs and ladders, sometimes carrying objects
- Able to stand or sit for long periods
- Able to handle, lift, and carry objects up to 50 pounds repeatedly
- Comfortable working in all weather and environmental conditions
- Ability to live in close quarters with other crew members
Job Qualifications
- Minimum of 2 years experience managing a kitchen or galley staff
- Minimum of 4 years restaurant or banquet cooking experience in positions of increasing responsibility, including line cooking and prep work
- Good time management skills including ability to handle multiple tasks, set priorities, and meet deadlines
- Ability to get along with co-workers and support a team environment
- Extensive knowledge of special diets and allergies
- Ability to execute a wide variety of cuisines and cooking styles
- Experience with passenger vessels preferred but not required
- Flexibility to adapt quickly to changing schedules and circumstances
- Comfortable living and working in close quarters with other crewmembers
- Excellent communication skills including ability to present sensitive information
- Maintain a professional demeanor at all times
Job Duties
- Plan, oversee, and execute all guest and crew meals with the assistance of the Pastry Chef and Galley Utility
- Follow company guidelines for ordering, inventory, and budget management
- Maintain quality and consistency in menu items daily
- Participate in the cooking and preparation of food items as a member of the galley staff
- Prepare items for special diets for guests and crew such as vegan, gluten free, and allergies
- Execute all special requests for group charter trips including menu changes and special ingredients
- Ensure provisioning of all food and related products by placing weekly orders with Hotel Manager
- Store provisions and maintain accurate inventories with appropriate stocking and rotation
- Clean and organize provision storage areas in galley, freezer, refrigerator, and storeroom
- Limit food waste and document as needed
- Work with Hotel Manager to create a comfortable, safe work environment for all galley employees
- Maintain professional demeanor with guests, crew, staff, agents, officials, and public
- Supervise one to two team members in daily galley operations
- Oversee training for new hires and ongoing training for galley staff
- Monitor, counsel work performance, conduct written evaluations, and manage discipline as necessary
- Respond to concerns, complaints, and allegations timely and conduct investigations
- Comply with all CDC/FDA vessel sanitation requirements
- Participate in onboard safety training, meetings, and drills
- Maintain familiarity with duties under company Safety Management System including Emergency Response Activities
