The Wok Cook position at HMSHost is an exciting opportunity to join a dynamic team focused on delivering high-quality Asian-inspired cuisine under the Pei Wei concept. This role is responsible for all wok-cooked food preparation, ensuring that every dish meets strict recipe standards and is served with attention to detail and presentation. The Wok Cook performs essential food preparation duties including operating kitchen equipment like fryers and choppers, managing ingredient rotation and freshness, and maintaining food safety by adhering to HACCP guidelines. Working in this role means actively supporting a team environment while communicating effectively with management about any issues or additional needs that arise during shifts.
This non-exempt position reports directly to store management and is ideal for individuals who thrive in fast-paced kitchen environments and are passionate about culinary arts, especially wok cooking and Asian cuisine preparation. The job requires standing or walking for extended periods, handling kitchen tools safely, and maintaining sanitation standards throughout the workday. Job Requirements
- Minimum of 6 months wok-cooking experience or 9 months sauté experience with wok training
- knowledge of HACCP standards
- ability to speak and understand English
- ability to stand and/or walk for up to nine hours
- ability to handle kitchen knives safely
- ability to lift up to 50 lbs
- ability to work in warm kitchen environments
- adherence to company and regulatory policies
- good communication skills
- ability to perform basic math calculations
Job Qualifications
- Minimum of 6 months of wok-cooking experience where food is prepared to order including ability to work two woks simultaneously preferred
- if no previous wok experience, minimum of 9 months of sauté experience in a high volume and high prep casual dining kitchen along with successful completion of wok-training program
- food preparation skills and knowledge of HACCP standards
- ability to speak, read and comprehend instructions and policy documents
- ability to converse comfortably and professionally
- ability to work in varied kitchen temperatures
- ability to wok-cook, stand and/or walk for up to nine hours
- exceptional skills in handling product and specialty ingredients and quality control
- ability to adapt to new menu items and cooking techniques
- ability to read and understand recipes, prep lists and pars
- capacity to perform basic math and measurement calculations
- ability to reach, bend, balance and transport various objects weighing up to 30 lbs repeatedly, occasionally up to 50 lbs
Job Duties
- Follow recipes and product directions for preparing and wok-cooking all specified menu items
- work with a sense of urgency to meet time goals while adhering to recipe standards
- display attention to detail and food presentation
- taste products, follow menus, estimate food requirements, check production and keep records
- perform basic math and measurement calculations associated with recipes
- operate kitchen equipment such as fryers, buffalo choppers, and cleavers
- handle knives safely using cut gloves
- maintain quality control for all products including monitoring freshness
- clean and sanitize work stations and equipment
- follow food safety and sanitation practices in compliance with HACCP standards
- stock, date, rotate and check temperature of product
- receive, move and lift food and beverage products and supplies
- comply with HMSHost and franchise policies as well as applicable regulatory agencies
