The role of Prep Cook at Fontainebleau Las Vegas is a crucial position within the culinary team responsible for supporting the Executive Chef and Executive Sous Chef in the effective day-to-day operations of food preparation. This role focuses on executing preparation lists, receiving and quality checking products through all stages of preparation, and ensuring that all food is handled and stored according to the Southern Nevada Health District (SNHD) regulations. The Prep Cook must maintain a very high standard of food quality and adhere strictly to health and safety policies including HACCP guidelines. This position requires attention to detail to minimize waste and spoilage, maintain cleanliness and sanitation in culinary work areas, and ensure proper equipment use. The Prep Cook works in a fast-paced, high volume luxury environment where meeting deadlines and maintaining product quality is paramount.

The position offers a competitive salary of $27.46 per hour and requires flexibility to work varying shifts including nights, holidays, and weekends. This role does not have supervisory responsibilities but plays an integral part in the kitchen operations by keeping production running efficiently and effectively. Job Requirements

  • must be at least 18 years of age
  • two or more years of prior relevant experience preferred
  • complete knowledge of health and safety regulations
  • ability to read and interpret safety rules and instructions in English
  • ability to communicate verbally and in writing in English
  • physical ability to lift up to 50 pounds occasionally and perform various physical tasks including pushing, pulling, reaching, bending, twisting, stooping, stacking, crouching, kneeling, and balancing
  • willingness to work flexible hours including nights, holidays, and weekends

Job Qualifications

  • must be at least 18 years of age
  • two or more years of relevant experience in a luxury high volume property preferred
  • complete knowledge of health and safety regulations
  • in-depth skills and knowledge of kitchen operations, especially large-volume production
  • extensive kitchen technical knowledge and current culinary trends
  • ability to read and follow recipes and procedures
  • excellent organizational skills
  • ability to function under time constraints and deadlines with attention to detail
  • ability to work a flexible schedule including nights, holidays, and weekends
  • ability to work in a fast-paced, busy, and stressful environment
