The position demands proficiency in all meal periods—breakfast, lunch, and dinner—and the flexibility to rotate through buffet stations and room service duties. Duties include setting up assigned stations with required supplies, following proper service sequences, addressing guest concerns promptly, and ensuring cleanliness and orderliness of the station.
This role is also essential in supporting private parties and events held onboard by assisting with setting up and serving food and beverages. Job Requirements
- High school diploma, secondary education degree or equivalent
- courses or training in safety, environmental, public health and sanitation regulations and procedures
- ability to assist 1-2 waiters servicing 16 to 32 seats
- able to carry up to 12 covers or 16 glasses on a waiter tray
- ability to work in a multi-cultural environment
- flexibility to adjust to schedule changes
- physically able to meet U.S. Coast Guard merchant mariner credential requirements including balance, climbing, lifting, grasping, crouching, standing for extended periods, reacting to alarms, and wearing personal flotation devices
Job Qualifications
- Minimum of two years experience as a front waiter with fine dining and banquet service experience
- minimum of two years experience selling and serving wine and other beverage products
- intermediate to advanced level English verbal and writing skills
- knowledge of service requirements for various restaurant concepts and meal periods
Job Duties
- Assist with achieving departmental guest satisfaction targets and food and beverage revenues by following established service strategies and optimizing up-sell opportunities
- perform other related duties as assigned or directed
- be familiar with safety and environmental policies and procedures
- ensure assigned station is properly set up with required china, glassware, silverware and mise-en-place before service
- comply with sequence of service for food and beverage and follow lead instructions of waiters
- resolve any service or product deficiencies to ensure guest satisfaction
- ensure assigned station is cleaned and set up at the end of meal periods and complete all side work
- man non-cooking buffet action stations such as carving or dessert stations
- deliver food and beverage orders to guest staterooms according to procedure
- deliver amenities to guest staterooms
- assist with private parties and functions
- field guest phone orders and handle according to procedures
- clear service trays from staterooms, corridors, and pantries in a timely manner
