Job Description

A large, well-established bakery and deli company renowned for its exceptional food, cakes, tarts, and pastries is seeking an experienced Vice President of Bakery Operations. The Vice President of Bakery Operations will be reporting directly to the CEO and will hold a critical leadership role within the organization.

This leadership role involves overarching responsibility for the bakery operations, ensuring that every aspect from recipe adherence to finished product presentation at the cafe level is flawlessly executed. The VP will safeguard the bakery vision and authority, uphold product quality, and drive continuous improvements across all operational segments. Strategic oversight includes food safety protocols, team member safety, staffing management, and fostering a culture of engagement and development. Maintaining production efficiency, inventory management, and quality control through Six Sigma and lean methodologies are key components of this role. The VP will ensure compliance with all relevant policies and government regulations while managing the profits and losses of the bakery division. In addition to supervising the Bakery Plant Manager and partnering with the Market Executive Pastry Chef, the VP will orchestrate efforts to meet future market demands and maximize profitable growth.

The role demands exceptional business leadership skills to maintain the bakery's conceptual essence while steering overall business strategies and key initiatives. The VP will be responsible for the total quality management systems related to bakery production, packaging, display, and special orders across all sales channels. Collaborating closely with the Bakery Innovation team, the VP will lead product development, cost control, and commercialization processes to establish repeatable and scalable gold standards. This includes timely resolution of quality issues and production inquiries raised by Market Pastry Chefs. Operational excellence is paramount, with responsibilities spanning staffing, training, scheduling, inventory accuracy, and logistics management to facilitate smooth bakery operations and uninterrupted product supply.

The VP will actively promote safety, sanitation, crisis management procedures, and adherence to DEIB principles, ensuring a positive and inclusive workplace culture. They must foster effective communication across teams, provide clear performance feedback, and maintain a zero-tolerance policy on harassment. Job Requirements

  • Minimum 10 years experience in culinary leadership role
  • Medium to large scale multi-unit experience preferred (50+ units)
  • Culinary degree and/or bachelor's degree in culinary arts or baking
  • Minimum 5 years product development leadership experience in bakery production and/or manufacturing
  • Experience in bread and/or pastry innovation preferred
  • Food science and nutrition experience preferred
  • Skilled in communication, listening, presentation, and conflict resolution
  • Ability to work collaboratively and independently
  • Basic computer knowledge including Outlook, Word, and Excel
  • Ability to travel 50% or more
  • Able to stand for 10 hours per shift/day
  • Able to lift 50 pounds regularly
  • Able to work flexible days including holidays and weekends
  • Able to work flexible hours including nights and overnight shifts

Job Qualifications

  • Culinary degree and/or bachelor's degree in culinary arts or baking
  • Minimum 10 years of experience in culinary leadership roles, preferably in medium to large multi-unit operations (50+ units)
  • Minimum 5 years of product development leadership experience in bakery production and manufacturing
  • Previous experience in bread or pastry innovation, European pastry knowledge preferred
  • Food science and nutrition background, food science degree or RDA degree is a plus
  • Strong communication, listening, presentation, and conflict resolution skills
  • Ability to manage up and down and work collaboratively across teams
  • Basic computer skills including Outlook, Word, and Excel
  • Six Sigma and lean manufacturing knowledge is a plus
  • Fluency in Spanish and/or Portuguese is advantageous
  • Familiarity with FSMA and GMP regulations is preferred

Job Duties

  • Maintain and protect the integrity of the bakery pillar in concept essence
  • Responsible and accountable for the overall bakery operations business strategy and related key initiatives/projects
  • Manage bakery operations P&L and control budgeted versus actual expenses
  • Monitor bakery plant capabilities and capacity alongside key stakeholders to support profitable growth
  • Develop and maintain quality control processes and ingredient adherence
  • Implement and uphold total quality management systems using six sigma and lean methodologies
  • Resolve bakery quality issues and support product development efforts
  • Ensure adequate staffing, training, and scheduling across bakery departments
  • Manage inventory and logistics to ensure efficient bakery supply and operations
  • Enforce safety, sanitation, and compliance with all regulations
  • Develop cost reduction processes without compromising quality or productivity
  • Lead bakery equipment maintenance and facility upkeep
  • Conduct management meetings to communicate product, operational, and personnel information
  • Support design and startup of new bakeries and enhancements to production systems
  • Promote and uphold culture, values, diversity, equity, inclusion, and belonging (DEIB) plans
  • Manage onboarding, training, performance evaluations, and team engagement
  • Maintain effective relationships across bakery and other organizational teams
  • Address employee relations issues in collaboration with HR
  • Adhere to crisis management procedures and conduct regular operational reviews
