The role of Vice President of Food and Beverage at Grand Sierra Resort is a senior leadership position tasked with overseeing the entire Food and Beverage Department. This key executive role involves strategic planning, operational management, team leadership, and financial oversight across multiple outlets and bars as well as banquet and stewarding departments. The Vice President is responsible for ensuring that all food and beverage services align with the company’s Grand service standards and brand attributes.
This position is highly collaborative, requiring interaction with executive leadership, casino marketing, entertainment management, and lease partners to enhance guest experiences. Responsibilities include managing budgets, forecasting business performance, monitoring cost controls such as food and labor costs, and ensuring compliance with health, safety, and regulatory standards. The Vice President also plays a vital role in training and developing Food and Beverage personnel, fostering a productive work environment, and driving employee engagement. The role demands a deep knowledge of the food service industry, strong leadership capabilities, proficiency in various management software, and the ability to communicate effectively across different departments.
The successful candidate will manage over a dozen food and beverage outlets, six bars, extensive banquet operations spanning 200,000 square feet of meeting space, and stewarding functions. The role involves constant attention to guest feedback, maintenance and cleanliness standards, financial reporting, and collaborative efforts to meet the resort’s profit and service goals. Job Requirements
- Minimum bachelor degree in hospitality, business administration, or related field
- 10 years food and beverage management experience in casino/resort settings
- Experience with 8 or more outlets
- Ability to maintain appropriate gaming license and alcohol awareness card
- Must be at least 21 years of age
- Ability to perform physical tasks including standing, walking, reaching, bending, and lifting up to 50 pounds
- Flexible to work all shifts including holidays, nights, and weekends
- Ability to use various software and communication tools
- Strong clerical, coordination, supervisory, and problem-solving abilities
Job Qualifications
- Bachelor’s degree in hospitality, business administration, or a related field
- Minimum 10 years of food and beverage management experience in casino or resort style settings with 8 or more outlets
- Strong working knowledge of food service industry, cuisines, and beverages
- Experience directing, training, and developing food and beverage personnel
- Skilled in developing and monitoring effective food and beverage controls
- Proficient in food and beverage software and management systems
- Excellent verbal and written communication skills
- Ability to work well in cohesive team settings
- Highly organized with strong prioritization and deadline management
- Proficient in Microsoft Office including Project, Word, Excel, PowerPoint, Publisher, and Outlook
- Demonstrated problem solving, decision making, and independent judgment skills
- Flexible to work varied shifts including holidays, nights, and weekends
- Must be at least 21 years old
Job Duties
- Oversee all aspects of food and beverage division including 12 outlets, 6 bars, banquet department and stewarding
- Oversee banquets department with 200,000 square feet of meeting space
- Collaborate with executive leadership on marketing and promotional plans
- Provide monthly business forecasting to manage labor and service needs
- Manage profit and loss statements including COGs, labor, and supplies
- Deliver financial reporting to ownership and general management
- Set and execute annual budget, marketing, and business plans for food and beverage
- Oversee all food and beverage training materials
- Develop and implement guest service standards consistent with company brand
- Interact daily with guests to collect operational feedback
- Review guest comments and attend meetings to monitor action plans
- Ensure maintenance and cleanliness according to safety and health standards
- Manage audit exceptions through operational managers
- Establish relationships with casino marketing and entertainment for VIP guest experiences
- Direct maintenance and repair activities
- Oversee ordering, inventory, and product identification
- Foster a positive work environment and open communication
