Job Requirements

  • Any combination of education, training, or experience that provides required knowledge, skills, and abilities
  • minimum 1+ years culinary management experience in a fine dining restaurant
  • must have the ability to obtain/renew all government required licenses or certifications
  • possess excellent communication skills, both written and oral
  • ability to read, write, speak, and understand English
  • possess sufficient mathematical skills for recipes, schedules, forecasts, and budgets
  • ability to add, subtract, multiply, and divide using whole numbers, fractions, and decimals
  • maintain ability to provide direction, instruction and guidance to team members and guests
  • able to listen and respond to guest inquiries professionally
  • ability to collect information and solve customer concerns promptly
  • willing to work varying schedules reflecting business needs
  • able to maintain stamina and proper mental attitude under pressure
  • able to regularly sit, stand, walk, speak, hear, use hands, and occasionally lift/move up to 25 pounds
  • capable of working in loud and smoke-filled environments

Job Duties

  • Supervises production of all butchering, sauce, vegetable, and garnish production
  • ensure good turnover of products by practicing proper rotation and maintaining stock
  • listen and respond to guest inquiries using a positive, clear speaking voice
  • monitor staff performance, product quality and production flow
  • foster improvements where needed
  • participate in activities of cooks and team members involved in preparing, cooking, and presenting food
  • audit food storeroom items for quality and consistency, food cost and revenues
  • enforce daily sanitation, hand washing and safety codes
  • make constant contact with internal and external customers to ensure optimal guest service
  • analyze feedback from customers and implement suggestions for improvement
  • maintain productive working relationships with customers
