Mexico Ceaty is an innovative and dynamic dining establishment located within the Shops at Rivercenter, one of Texas's premier destinations, drawing over 12 million visitors annually. Tres Arcos, the flagship full-service restaurant within Mexico Ceaty, is a distinctive dining venue that encompasses a 975 square foot dining room, a commanding 1,520 square foot bar, and an exclusive 829 square foot private dining room. This restaurant celebrates the distinctive SATX-MX cuisine, which unites the bold and eclectic flavors of Texas and Mexico, amplified by San Antonio's unique creative flair. The menu ranges from Wagyu fajitas to avant-garde interpretations of traditional Mexican dishes like enchiladas, positioning Tres Arcos at the forefront of fine and elevated casual dining on the San Antonio River Walk.
As the General Manager of Tres Arcos, this role extends beyond traditional restaurant management. You will be responsible for building and nurturing a team that embodies the culture and values of Tres Arcos while delivering a dining experience that compels guests to return repeatedly. Leadership at Tres Arcos is guided by the LMA (Lead, Manage, Hold Accountable) framework, which means that success in this role requires equal strength in leading, managing operations and people, and holding team members accountable. This comprehensive approach is integral to maintaining high service standards and achieving business goals.
This is a full-time leadership position with a strong emphasis on both vision and execution. Your responsibilities will include overseeing the entire guest experience spanning the dining room, bar, and private dining areas from open to close. Collaboration with the Kitchen Manager to ensure fluid communication and optimal menu knowledge is essential. You will also own the front-of-house labor scheduling, managing costs without compromising the service quality. Additionally, the role includes fostering event and private dining revenue through strategic partnerships with event platforms like Triple Seat and proactive guest engagement.
The first 90 days in this role are critical, with an emphasis on pre-opening priorities to set the stage for long-term success. The General Manager will take full ownership of the Tres Arcos profit and loss statement, controlling food, beverage, labor, and other expenses. Regular involvement in leadership meetings across the Mexico Ceaty venue is expected to align strategies and elevate operations collectively.
This position demands someone with at least five years' experience in full-service restaurant management, including two or more years in a General Manager or senior managerial role, preferably in fine dining or elevated casual environments with an annual revenue exceeding $3 million. Experience with Mexican or SATX-MX cuisine and opening new restaurant concepts is highly valued. Fluency in reading and acting upon financial metrics, familiarity with restaurant technology such as Toast POS, 7shifts scheduling, and event CRMs like Triple Seat are important for success.
Bilingual ability in English and Spanish is highly preferred to serve the diverse River Walk clientele and team. A genuine belief in the EOS leadership model to equally lead, manage, and hold accountable daily is essential. You will be instrumental in ensuring Tres Arcos becomes a central anchor in elevating the entire Mexico Ceaty guest experience and maintaining an outstanding reputation in the San Antonio culinary scene.

Job Requirements
- 5+ years of full-service restaurant management experience
- At least 2 years as a General Manager or Senior Manager
- Proven leadership in high-volume dining with $3M+ revenue
- Knowledge of fine dining or elevated casual concepts
- SATX-MX or Mexican cuisine experience preferred
- Opening new restaurant teams experience advantageous
- P&L fluency and ability to act on financial data
- Experience using Toast POS and 7shifts or similar platforms
- Experience with Triple Seat or comparable events CRM

Job Duties
- Own the full guest experience at Tres Arcos from open to close dining room, bar, and private dining
- Build, train, and develop the entire Tres Arcos FOH team using the EOS/LMA framework
- Manage daily labor scheduling to hit labor cost targets while maintaining service quality
- Execute pre-shift meetings every service so the team is informed, aligned, and energized before every shift
- Partner with the Kitchen Manager on menu knowledge, ticket times, and FOH/BOH communication
- Drive private dining and event revenue and own the relationship with Triple Seat and the events team
- Monitor and respond to all guest feedback including on-site, online reviews, and direct communication
- Maintain full compliance with TABC regulations, food safety standards, and all Texas ABC requirements
- Conduct weekly one-on-ones with Shift Leads and direct reports using the EOS cadence
- Own the Tres Arcos P&L including food cost, beverage cost, labor, and controllable expenses
- Participate in Mexico Ceaty leadership meetings and contribute to venue-wide operations
- Manage inventory, ordering, and vendor relationships for FOH supplies and beverage program
