Job Requirements
- High school diploma or equivalent
- culinary experience
- ability to work flexible and long hours
- physical ability to exert up to 50 pounds of force occasionally and 20 pounds frequently to lift, carry, push or pull objects
- ability to stand for entire shift
- ability to withstand temperature variations from hot to cold
- thorough menu and preparation knowledge according to hotel standards
Job Qualifications
- High school diploma or equivalent and/or experience in a hotel or related field preferred
- culinary experience required
- flexible and able to work long hours when necessary
- knowledge of cooking techniques including charbroiling, poaching, deep-frying, saute, braising, roasting and par-cooking
- knowledge of herbs and spices and their proper use
- thorough knowledge of menus and preparation required according to hotel standards
Job Duties
- Maintain cleanliness and organization of all storage areas
- complete necessary food and station preparation prior to the opening of the restaurant to ensure prompt and efficient guest service
- prepare and display buffet food items according to hotel standards
- recognize quality standards in fresh vegetables, fish, dairy and meat products
- maintain a clean and sanitary environment with knowledge of proper handling, storage and sanitation
- prepare all foods following hotel standard recipes and special preparations under guidance
- breakdown buffets and kitchen line, properly storing food and equipment at the end of each meal period
- know the location and operation of all fire extinguishing equipment
- practice safe work habits to avoid injury
- use production charts as specified by hotel standards
- support any kitchen position needing help
- follow all health department and company regulations regarding food storage, handling and safety
- operate and maintain cleanliness of kitchen equipment
- maintain a 'Clean As You Go' policy
- assist in food storage and rotation according to procedures
- sign keys out and back in under supervision as needed
