Senior Cooks at Seneca Gaming Corporation must be skilled in coordinating food orders, regulating cooking equipment, and ensuring all food items are properly stored and labeled to prevent spoilage or contamination. They must command a wide range of cooking stations including roast, fry, pasta, vegetable, grill, pantry, breakfast, sauté, and high-volume quantity cooking. This position is integral in training and mentoring junior cooking staff, promoting teamwork and efficiency in the kitchen. Job Requirements

  • Must be 18 years of age or older upon employment
  • High school diploma or equivalent required
  • Three years of advanced cooking skills required
  • Previous customer service required
  • Must possess excellent communication skills including the ability to read write and speak effectively
  • Ability to deal effectively and interact well with customers and employees
  • Must have the ability to resolve problems and conflicts in a diplomatic and tactful manner

Job Qualifications

  • Must be 18 years of age or older upon employment
  • High school diploma or equivalent required
  • Culinary education or experience preferred
  • Three years of advanced cooking skills required
  • Previous customer service experience required
  • Excellent communication skills including the ability to read write and speak effectively
  • Ability to interact well with customers and employees
  • Strong problem solving and conflict resolution skills in a diplomatic and tactful manner

Job Duties

  • Insure food items are properly stored including raw materials and prepared items
  • Inspect all outgoing orders for proper preparation including portion control and garnishing
  • Ensure availability of soups sauces and gravies prior to restaurant opening and assemble necessary supplies and equipment
  • Take inventory of all meats and seafood with knowledge of required amounts
  • Coordinate food orders to appropriate cooks
  • Prepare food items adhering strictly to recipe manuals and food specifications
  • Review production schedules to determine food preparation requirements including variety and quantity
  • Complete production sheets and other records with Sous Chefs as required
  • Maintain clean work areas utensils and equipment
  • Regulate temperatures of ovens broilers and grills
  • Maintain proper food temperatures in accordance with regulatory and ServSafe standards
  • Properly label date and rotate all products to ensure safety and sanitation
  • Command all kitchen stations including roast fry pasta vegetable grill pantry breakfast sauté and high volume cooking
  • Work collaboratively with Sous and Room Chefs in daily operations
  • Teach and mentor cooks and production cooks
  • Work harmoniously with others in a strenuous environment
  • Report to work well-groomed in full uniform on time with badge
  • Provide prompt friendly courteous service of food and beverage to guests
  • Be hospitable friendly and polite with guests coworkers and management using positive body language
  • Maintain understanding of information security policies and comply at all times
  • Provide exceptional customer service and maintain a professional work environment
  • Meet attendance guidelines and adhere to regulatory departmental and company policies
  • Complete all required training programs within nine months
  • Attend all necessary meetings
  • Duties responsibilities requirements and expectations subject to change with hours determined by 24-hour schedule
