Job Requirements

  • Must have a high school diploma or GED
  • Must be able to successfully pass Benihana chef training program
  • Previous experience as chef or cook highly desirable
  • Ability to work flexible hours including evenings, weekends, and holidays
  • Must be physically able to stand for extended periods and perform manual kitchen tasks
  • Strong communication skills
  • Ability to engage and entertain guests
  • Adherence to food safety and sanitation regulations

Job Duties

  • Greets and welcomes guests within 15 minutes of their teppan order
  • Performs a cooking show for assigned tables ensuring appropriate and courteous guest interaction
  • Provides guests with information about Benihana foods during cooking or upon inquiry
  • Responds promptly and courteously to guest requests
  • Asks guests for cooking preference and follows guest instructions
  • Prepares meats, seafood, poultry, vegetables, and other food items for cooking using various kitchen equipment
  • Performs shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts, and floors
  • Maintains cleanliness and sanitation of kitchen, teppan cooking areas, and kitchen equipment
  • Reports kitchen equipment or maintenance issues to the chief chef or manager on duty
  • Complies with company standards on food portioning, cooking methods, quality standards, recipes, service cycle, policies, and procedures
  • Prepares foods according to portion standards and recipe specifications including battering, breading, seasoning, and marinating
  • Adheres to proper food presentation and garnish guidelines
  • Handles, stores, labels, and rotates foods according to safety and health regulations
  • Uses knives, hand tools, utensils, and equipment to portion, cut, slice, and prepare food
  • Follows company guidelines on alcoholic beverage service
  • Maintains a clean appearance and courteous manner with guests
  • Notifies manager on duty of guest dissatisfaction or accidents
  • Participates in guest special occasion celebrations and may photograph guests at company direction
  • Performs other duties as assigned by supervisor
