This role requires an individual who is passionate about cooking and entertaining guests through teppanyaki-style food preparation right in front of them. The Chef will engage, entertain, and interact with diners, delivering a memorable and enjoyable experience by performing cooking shows while preparing a variety of food items such as meats, seafood, poultry, and vegetables using an array of kitchen equipment. The Chef is responsible for greeting guests promptly, handling guest inquiries with courtesy, and ensuring food portions and cooking methods adhere strictly to Benihana's standards. Maintaining cleanliness and sanitation in the kitchen and teppan cooking areas is a critical part of the job, along with preparing and setting up side orders. Operational duties include shift opening and closing tasks, cleaning refrigeration units and chef carts, as well as reporting maintenance issues as needed. Moreover, the Chef must know and follow company policies regarding food safety, preparation techniques, recipe compliance, food presentation, and alcohol service. The role demands attention to detail in food handling, storage, labeling, and rotation according to health and safety regulations, including the FIFO method. The Chef must also present themselves professionally and handle guest interactions with the utmost courtesy, ensuring guest satisfaction throughout their dining experience. Job Duties
- Greets and welcomes guests within 15 minutes of their teppan order
- performs a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
- provides guests with information about Benihana foods as they are being cooked or upon guest inquiries
- responds promptly and courteously to guest requests
- asks guests for cooking preference and follows guest instructions
- prepares a variety of meats, seafood, poultry, vegetables and other food items using kitchen equipment including broilers, ovens, grills, processors, blenders and fryers
- performs shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
- maintains kitchen, teppan cooking areas and equipment clean and organized, reporting maintenance issues to chief chef or manager on duty
- prepares foods in accordance with company portions and recipe specifications including battering, breading, seasoning and marinating
- adheres to company guidelines on food presentation and garnishes
- handles, stores, labels and rotates foods properly following public health safety and local laws using FIFO method
- uses knives, hand tools, utensils and equipment to portion, cut, slice, julienne, whip, beat and maintain food temperature
- adheres to company guidelines on alcoholic beverage service
- presents a clean and neat appearance and communicates courteously with guests
- notifies manager on duty immediately when guests are dissatisfied or accidents occur
- participates in guest special occasion celebrations and may photograph or be photographed with guests upon request
- performs other duties as assigned by supervisor
