The role of a Hibachi Chef at Benihana is a unique and dynamic position requiring not only culinary expertise but also strong interpersonal skills. The Hibachi Chef is responsible for cooking and entertaining guests at the hibachi tables, preparing a variety of meats, seafood, poultry, and vegetables directly in front of customers. This role is pivotal in creating an unforgettable dining experience, blending culinary creativity with guest interaction and showmanship. The chef performs cooking shows adhering to the company’s service and safety standards, ensuring that food is cooked properly, presented attractively, and served promptly.

In addition to cooking and entertaining, the Hibachi Chef maintains cleanliness and organization in the kitchen and cooking areas, ensuring a sanitary environment. They are required to understand and comply with food preparation guidelines, portion control, and cooking methods specific to Benihana’s menu. The position also involves preparing food for cooking, maintaining kitchen equipment, and helping with opening and closing shift responsibilities. The successful candidate will participate actively in enhancing guest experiences, responding promptly to guest needs, and collaborating with the restaurant team to maintain high standards.

This role requires completing Benihana’s specialized chef training program, which is a paid five-week course designed to develop culinary skills and customer engagement techniques. A high school diploma or GED is necessary, and previous experience as a chef or cook is highly desirable but not mandatory. Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • perform a cooking show for assigned tables ensuring appropriate and courteous interaction with guests
  • provide guests with information about Benihana foods as they are being cooked or upon inquiry
  • respond promptly and courteously to guest requests
  • ask guests for cooking preference and follow guest instructions
  • prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking using various kitchen equipment
  • perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
  • maintain kitchen, teppan cooking areas, kitchen equipment and ensure food storage areas are clean, sanitary and organized
  • comply with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures
  • prepare foods according to portion standards and recipe specifications prior to cooking
  • adhere to guidelines on proper food presentation and garnishes
  • handle, store, label, and rotate foods according to safety and health laws using FIFO method
  • use knives, hand tools and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill or freeze food
  • adhere to company guidelines on alcoholic beverage service
  • present a clean and neat appearance and use courteous manner with all guests
  • notify MOD when guests are not satisfied or if an accident occurs
  • participate in guest special occasion celebrations
  • perform other duties as assigned
