Job Requirements
- High school diploma or equivalent
- Food safety certification with good understanding of food safety and sanitation regulations
- Valid driver’s license with clean abstract
- Experience in a professional kitchen or supermarket as sushi chef or specialist
- Knowledge of food cost, margin, and shrink
- Ability to calculate cost and set retail prices
- Excellent communication skills
- Good interpersonal skills
- Ability to work independently and as part of a team
- Strong multitasking and adaptability skills
- Attention to detail and organizational skills
- Ability to work in fast-paced environment
- Ability to stand for extended periods
- Capable of lifting and carrying up to 50 pounds
- Able to push or pull objects weighing up to 1000 pounds
- Must be at least 18 years old due to knife operation
- Flexible to work various shifts including early mornings, evenings, weekends, holidays, and overnight shifts
Job Qualifications
- High school diploma or equivalent
- Food safety certification
- Clean driver’s license and driving record
- Proven experience as a sushi chef or sushi specialist
- Extensive knowledge of sushi types, ingredients, and preparation techniques
- Strong communication skills both verbal and written
- Good interpersonal skills with a friendly and patient attitude
- Ability to work independently and in a team
- Excellent organizational and time management abilities
- Working knowledge of Microsoft Word, Excel, PowerPoint, and email
Job Duties
- Prepare a variety of Japanese quality sushi including nigiri, maki, chirashi, and inari
- Prepare Japanese quality sashimi by expertly cutting fish into ala carte servings and moriawase platters
- Manage the production and proper handling of seafood including freshness control, inventory, and ordering
- Maintain cleanliness and sanitation practices throughout the sushi preparation area
- Train and develop sushi staff’s skill and knowledge in sushi and sashimi preparation
- Monitor sushi staff performance, providing coaching and support
- Manage sales systems including PLU codes, sale rules, expiration dates, and product labeling
- Create and execute production plans to meet budgeted sales and set retail prices accordingly
- Schedule and plan labor to meet production and business demand
- Assist with the development of standardized recipes and new store operations as needed
