Job Requirements

  • High school diploma or equivalent
  • Food safety certification with good understanding of food safety and sanitation regulations
  • Valid driver’s license with clean abstract
  • Experience in a professional kitchen or supermarket as sushi chef or specialist
  • Knowledge of food cost, margin, and shrink
  • Ability to calculate cost and set retail prices
  • Excellent communication skills
  • Good interpersonal skills
  • Ability to work independently and as part of a team
  • Strong multitasking and adaptability skills
  • Attention to detail and organizational skills
  • Ability to work in fast-paced environment
  • Ability to stand for extended periods
  • Capable of lifting and carrying up to 50 pounds
  • Able to push or pull objects weighing up to 1000 pounds
  • Must be at least 18 years old due to knife operation
  • Flexible to work various shifts including early mornings, evenings, weekends, holidays, and overnight shifts

Job Qualifications

  • High school diploma or equivalent
  • Food safety certification
  • Clean driver’s license and driving record
  • Proven experience as a sushi chef or sushi specialist
  • Extensive knowledge of sushi types, ingredients, and preparation techniques
  • Strong communication skills both verbal and written
  • Good interpersonal skills with a friendly and patient attitude
  • Ability to work independently and in a team
  • Excellent organizational and time management abilities
  • Working knowledge of Microsoft Word, Excel, PowerPoint, and email

Job Duties

  • Prepare a variety of Japanese quality sushi including nigiri, maki, chirashi, and inari
  • Prepare Japanese quality sashimi by expertly cutting fish into ala carte servings and moriawase platters
  • Manage the production and proper handling of seafood including freshness control, inventory, and ordering
  • Maintain cleanliness and sanitation practices throughout the sushi preparation area
  • Train and develop sushi staff’s skill and knowledge in sushi and sashimi preparation
  • Monitor sushi staff performance, providing coaching and support
  • Manage sales systems including PLU codes, sale rules, expiration dates, and product labeling
  • Create and execute production plans to meet budgeted sales and set retail prices accordingly
  • Schedule and plan labor to meet production and business demand
  • Assist with the development of standardized recipes and new store operations as needed
