The role of Sushi Trainer/Supervisor is critical to the company’s operational and quality standards. The Sushi Trainer/Supervisor acts as a specialist in sushi preparation and training, working closely with the Sushi Operations Director to oversee the production, storage, and merchandising of sushi products across the facilities. This position entails training new and current sushi staff members to master the skills and knowledge necessary to meet stringent sushi production and quality targets. Responsibilities include ensuring freshness and quality through keen visual observation and customer feedback analysis, implementing timely staff evaluations, and offering incentives to reinforce high performance levels. The Sushi Trainer/Supervisor prepares various sushi types such as nigiri, maki, chirashi, and inari, maintaining consistent quality standards with detailed knowledge of sushi techniques and ingredients. This role requires advanced skills in filleting, cutting fish into sashimi and saku blocks, and managing seafood freshness, refrigeration, and sanitation protocols. The supervisor plans and monitors production timelines to ensure orders are completed efficiently and products are stocked promptly on shelves. Staff training is a vital function, focusing on enhancing sushi preparation skills, using equipment safely, minimizing waste, and improving overall staff performance through coaching and support.

Moreover, the Sushi Trainer/Supervisor manages sales systems including PLU codes, sales rules, and expiration date tracking while maintaining accurate production logs. Part of the role involves creating production plans aimed at achieving budgeted sales, setting retail prices based on market conditions, quality, yield, and labor costs, and scheduling labor to optimize productivity. Job Requirements

Job Qualifications

Job Duties

  • Prepare a variety of Japanese quality sushi including nigiri, maki, chirashi, and inari
  • Prepare Japanese quality sashimi by expertly cutting fish into ala carte servings and moriawase platters
  • Manage the production and proper handling of seafood including freshness control, inventory, and ordering
  • Maintain cleanliness and sanitation practices throughout the sushi preparation area
  • Train and develop sushi staff’s skill and knowledge in sushi and sashimi preparation
  • Monitor sushi staff performance, providing coaching and support
  • Manage sales systems including PLU codes, sale rules, expiration dates, and product labeling
  • Create and execute production plans to meet budgeted sales and set retail prices accordingly
  • Schedule and plan labor to meet production and business demand
  • Assist with the development of standardized recipes and new store operations as needed
