Lettuce Entertain You Restaurants, the parent organization behind Sushi-san, is actively expanding its footprint and currently seeking talented culinary professionals to grow their team. The Sushi Sous Chef will play a critical role in maintaining operational excellence within the kitchen. This position involves running back-of-house (BOH) shifts, ensuring all culinary activities are performed with efficiency and adherence to high standards. The Sous Chef will oversee food preparation and cooking, manage inventory levels, and supervise team members across multiple areas including the kitchen and dish teams. Leadership is paramount in this role, with responsibilities spanning from conducting pre-shift meetings to performing regular line checks to guarantee the consistent quality of all menu items.

Collaboration with the general manager and other managerial staff is an essential aspect of this position. The Sous Chef will work closely with the team to review and maintain recipe books and handle purchasing and ordering of food supplies. In addition to operational duties, the Sous Chef will assist in controlling food costs, improve communication between front-of-house and back-of-house staff, and actively participate in hiring, training, and developing the BOH team members. This leadership role requires excellent judgment, patience, and a commitment to teamwork.

Candidates for this position need to possess at least two years of experience as a sushi chef in a full-service restaurant environment. Expertise in preparing various sushi styles such as nigiri, sashimi, maki, and specialty rolls is necessary, along with expert knife skills and fish butchery experience. Job Duties

  • Run BOH shifts and ensure effective and efficient BOH shifts and operations including food prep and cooking, ensure adequate inventory levels of food and supplies, and supervise the kitchen, dish and all other BOH teams
  • Lead BOH pre-shift meetings and participating in line, temp and cooler checks and food tastings for the shift
  • Partner with GM and/or designated managers/chefs to regularly review and maintain recipe books
  • Perform regular line checks throughout the day to ensure quality of all menu items
  • Purchase and order food product and supplies for the restaurant including daily product order
  • Assist with tracking and controlling food cost
  • Ensure effective communication of food production and timing issues, needs, and special requests between front of house (FOH) and BOH
  • Partner with GM and management team to interview, hire, onboard, train, supervise and develop all BOH employees and teams as needed
  • Model and promote teamwork across all teams
  • Use tact and good judgment when dealing with challenges pertaining to guests, vendors and employees, and respond with patience and courtesy
  • Work a variety of days and shifts (including early mornings, late nights and weekends) at multiple sites with or without overnight travel, as needed
  • Move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, occasionally move and/or lift up to 50 pounds
