Umami Riot is currently seeking a talented and passionate Sushi Line Cook to become an integral part of the o ya team. The Sushi Line Cook will be responsible for executing the sushi program with consistency, focus, and reverence for technique. Meticulous care for sushi knives and specialty equipment is essential, alongside collaboration with the wider culinary and service teams to ensure smooth and timely service. Candidates will also participate in maintaining food safety, sanitation, allergen awareness, and health code compliance, ensuring a clean and organized workstation throughout the service. - Minimum 1 year of kitchen or hospitality experience preferred
- experience in sushi preparation preferred but not required

Job Duties
- Prepare sushi rice with proper technique, seasoning balance, texture, and consistency
- fabricate fish including hamachi, salmon, tuna, tai, and seasonal selections with precision and minimal waste
- execute nigiri and sashimi with accuracy, speed, and refined presentation aligned with restaurant standards
- prepare traditional and contemporary sashimi presentations as directed
- maintain and properly care for sushi knives and specialty equipment
- assist with ingredient receiving, preparation, labeling, and proper storage procedures
- uphold strict food safety, sanitation, allergen awareness, and health code standards at all times
